I made these for a party yesterday and everyone LOVED them...once the eggs are boiled and cooled, peel them and cut them width-wise (I don't have the v-slicer, so I used the crinkle-cutter - still looked pretty cute!). Scoop out yolks, mash and mix with mayo, mustard, and whatever else you use... I put hot sauce and cheese in mine. Mix 2 C water, 1 tbsp vinegar, and a few drops food coloring, then soak the eggs for a few minutes to let the color set. Fill the eggs with a decorative tip with your easy accent decorator, and put them in a bed of green-tinted coconut...it really adds to the presentation!
