Sorry to keep bugging you about this, but I have a couple of questions: Have you even frozen the pie crusts in your stoneware baker, with a sheet of parchment paper in between, then once frozen just put the shells in the freezer?

Also, on your old invitation you have "there will be a $$ raffle for the ACPS" - maybe it's too early in the morning for me, but what do you mean by that? Is it just a regular raffle? It's the dollar signs that are throwing me off.

No prob, Shannon.  To answer your questions:

Like I said in the pie crust thread (or one these related threads!) I used to do this BEFORE I got involved in PC & I used aluminum pie tins to do the freezing in.  You COULD try your method & see how it goes. The only concern I would have though is how to protect the pie crust from breakage while it's in the freezer.  The only other alternative I would have is to perhaps just take your pie crusts up to the point of placement in the DD Pie Plate, & leave it FLAT or maybe even try carefully folding it in fourths like you get in the store. Can't guarantee how these will turn out but hey it's worth a try!
 
Now as for your question about the APCS raffle that was just one I had extra laying around the house that I wanted to get rid of.  It was a while ago but I think I charged a couple of bucks per ticket if they were interested.

Jumping in on something I know NOTHING about (but I'm PLANNING to learn)  how about rolling them (like the new Pillsbury ones are done!)?  I'm thinking with waxed or parchment paper in between layers, then roll them around a paper towel cardboard tube???  I'm paying lots of attention to this thread because I plan to retire from my fulltime job next summer and REALLY would love to do this apple pie class next fall!!  Now if I can just learn how to DO it I'll be able to TEACH it, right LOL??  So I'm reading carefully!!!!!  Marilyn in GA

Marian, I remember seeing what you posted about using the pie pans, but I was trying to think of something I can do that would allow me to use the pie dish as the form (since it's bigger than the aluminum pans) but not keep it in the freezer the whole time.

I like the idea of rolling them up, though. However, I have issues with the thought of putting that much time and effort to make multiple shells and then have them all bust. I'm making a test-pie tomorrow and I think I'll try making a few extra pie shells to see how freezing goes...

Does anyone have the recipe for the filling for apple pie using our cinn+ and then putting it in a gallon bag & freezing?
