General : Holiday Craft Fairs - need help with ideas

Ok, I have done several fairs in the past, but I have 3 fairs coming up in the next 2 months and need some help.
 
I have never done a fair during the holiday season.  Do people want more cash/carry, or am I ok just having items shipped by order?
 
I was also thinking of creating some gift "packages."  I was thinking of tools essential for cookie making, or pizza lovers, etc.  I would use the sets already in the catalog/holiday brochure, but coming up with some of my own, as well.  Different prices and different sets.
 
Anyone have any experience or luck with this?

I've done a Holiday Fair and a Holiday Open House.  Both times I made up business card sized card that had a cutsy saying (Gift Tag sayings in the docs).  Printed those up and then wrote gift idea suggestions on the backs with prices.  Everyone loved the idea!  They would have loved to purchase some of them there but I had to explain that I don't carry inventory because it would cost way to much for me to buy one of everything and hope it sells.  That's the beauty of PC....(can you say recruiting spiel here? lol!)
 
I'm planning on doing another in November.  I'll do the same set up but I may make up a few cheap stockings to sell.  Just go to the dollar store and buy up a few stockings and purchase some small stocking stuffers to put inside and sell those.  Things that are cheap and too cheap to have to charge people direct shipping on.  At my last fair people were wanting just one little thing and I felt terrible having to charge them direct shipping on a $4 item!  Then they get the feeling that they have something to take with them from the fair, but can still order the higher priced items and have them shipped to them.

You mentioned stockings...did you see where they took the Silicone hot pad/trivet & made it into a cone & put gifts in them?  Really cute!
