- 1 cup all-purpose flour

- 1/2 teaspoon ground nutmeg

- 1/2 teaspoon cinnamon

- 1/4 teaspoon salt

- 3/4 cup granulated sugar

- 3 tablespoons stick margarine, softened

- 1 egg

- 2 tablespoons low-fat (1%) milk

- 2 large baking apples, cored and sliced (3 cups)

- 1 teaspoon granulated sugar

- 1/2 teaspoon cinnamon

DIRECTIONS

Preheat the oven to 350 degrees F. Spray an 8x8 inch baking pan with nonstick cooking spray. In a medium bowl, whisk together the flour, nutmeg, cinnamon, and salt. In a medium bowl, with an electric mixer at medium speed, beat the sugar and margarine together until fluffy, 2 minutes. Beat in the egg and milk until smooth, 1 minute. Add the flour mixture to the margarine mixture in thirds, beating until smooth, 2 minutes. With a large spoon, stir in the apples until evenly distributed. Spread the batter in the prepared baking pan. In a small bowl, combine the sugar and cinnamon, then sprinkle evenly on the batter. Bake until browned and the sides start to pull away from the pan 40-45 minutes.
