Hi, look, I went out into the garden this morning in the pouring rain and picked a few of my Victoria plums.  Still a bit under ripe so they are fairly hard and sour.  Guess what I am going to do with these, I am going to rinse them in boiling water for a few seconds, let them cool down and then pickled them in vinager and salt.  They have to be hard so they come out firm after pickling, soft ripe ones are no good because they become a mush when you bite into them. 
 
  I love watching my hubby cringe when I munched a pickled plum, still got a jar left from last year and I will have loads this year, got three fruiting trees to pick.            Lily
