Coffee Cake with nutty topping .
  Ingredients:
1/4 cup margarine 3/4 cup sugar;
1 egg, slightly beaten; 1 1/2 cup flour ;
2 teaspoons baking powder ;1/2 teaspoon salt ;
1 cup milk ;1 teaspoon vanilla extract .
Topping:
1 cup brown sugar ;3 tablespoons flour ;
2 teaspoons cinnamon; 4 tablespoons margarine ;
1/2 cup walnuts or pecans, finely chopped
 Preparation:
Preheat oven to 350 degrees. Spray a 9" x 9" pan with
nonstick cooking spray.
In a medium bown, cream margarine & sugar; beat in egg.
Sift together flour, baking powder
and salt in a separate bowl.
Add to creamed mixture alternately with milk.
Stir in vanilla.
Pour blended mixture into prepared pan.
To make topping: In a small bowl,
mix together sugar, flour and cinnamon.
Cut in margarine with pastry blender or fork.
Spoon half over batter and swirl.
Spoon remaining topping over batter and sprinkle with nuts.
Bake at 350 degrees for 30 mins

Fresh Peach Coffee Cake
Ingredients:
2 cups flour;1 cup sugar;2tsp.coffee powder;
2 tsp baking powder;1 tsp salt;
1/2 stick (4 Tbsp) butter or margarine;
1 egg;1 1/2 tsp vanilla;
1/4 cup buttermilk;
3 fresh peaches, peeled, stoned and cut into thin wedges;
1/2 tsp cinnamon;2 Tbsp sugar.
Preheat oven to 350 degrees F. In a mixing bowl,
combine the first four ingredients. Cut butter into dry ingredients.
 Combine, egg, vanilla and buttermilk.
Mix into dry ingredients quickly with a fork.
The mixture will appear dry and crumbly. Grease or spray
 a 10-inch cast iron skillet. Spoon half of the batter into the pan.
Place peaches over batter; sprinkle with cinnamon and
the remaining sugar. Spoon the rest of the batter over
the peaches. Bake in preheated oven for 45-50 minutes.
Cool slightly. Turn onto a large platter, invert to top side.
slice into wedges.

Coffee Cake
75g[3oz]Butter 40g [1&1/2oz] Edmonds Cornflour
175g[6oz] Sugar 3 tbsps Milk
1tbsps Coffee Essence 1tsp Edmonds Baking Powder
1/2 tsp Vanilla Essence 135g[4& 1/2oz]Flour
3 Eggs.
Cream butter ,sugar,coffee& vanilla essences together,.
Beat in egg yolks one at a time ,then sifted flour &
cornflour alternately with stiffly beaten egg whites.
Mix well,add milk and lastly baking powder.
Bake in 2 x 230mm[8"] greased tins 20-25 mins
@190oC[375oF].
Ice and fill with coffee butter icing
Decorate with cherries
and pipe with icing on top a VALENTINE heart .
Coffee Icing :
25 or 50 g[1-2oz] Butter 175g[6oz] Icing Sugar
1dstp Coffee Essence 1/2 tsp Vanilla Essence.
Melt butter,Add sifted icing sugar and other ingredients.
Beat well .If used for coffee cake ,add 2 tbsps ground
walnuts and a little Raspberry Jam..

Apricot Danish Coffee Cake 
Yields 1 10x15 inch jellyroll pan.
 Prep: 20 Minutes; Cook: 30 Minutes ;
Ready: 50 Minutes ;
1 (18.25 ozs) package white cake mix;
3 eggs ;1 1/2 cups sour cream ;
1 (15 ozs) can apricot halves, drained ;
1 tblspn butter ;1/2 cup slivered almonds ;
1 (8 ozs) package cream cheese ;2 tblspns milk ;
2/3 cup confectioners sugar ;2 teaspoons water ;
Preheat oven to 350 degrees F (175 degrees C).
Grease and flour a 10x15 inch jellyroll pan.
Set aside 1/2 cup of the dry cake mix. 
In a medium bowl, mix together eggs and sour cream.
Stir in the package of cake mix. Batter will be lumpy.
Spread batter into the prepared pan.
Using the back of a spoon, make 15 wells in the batter,
3 rows of 5. In another bowl, beat together the
cream cheese and milk until fluffy.
Place one tblspn of the cream cheese mixture into each well.
Place 1 apricot half, cut side up, onto each blob of cream cheese.
In a small bowl, combine the 1/2 cup of reserved
cake mix with the butter. stir in butter until the
mixture is crumbly. Stir in the slivered almonds, and
sprinkle the mixture evenly over the Danish.
Bake for 30 to 35 minutes in the preheated oven,
or until toothpick inserted into cake comes out clean.
To make the glaze, stir together the confectioners' sugar
and water until smooth, adding another teaspoon of
 water if necessary. Drizzle over the Danish when cool.
 Makes 15 servings

Coffee & Date Cake
1/2 cup very ripe mashed bananas;
1 cube butter, softened; 3 large eggs ;
1 tsp. vanilla ;1 1/4 cup water ;
3 cups flour ;1 tsp. soda ;1 dstsp. coffee powder ;
2 tsp. baking powder ;1 1/2 cup chopped dates ;
Topping:
1/3 cup chopped dates;
1/3 cup chopped walnuts;
1/3 cup coconut ;
Mix together bananas and butter until creamy.
Add eggs, vanilla and water. Mix well.
Add flour, soda and baking powder and mix well.
 Stir in 1 1/2 cups chopped dates.
Pour batter into a greased 9 x 13 inch pan and spread.
 Combine topping ingredients and sprinkle over batter.
 Bake at 350 degrees F. for 20 or 25 minutes or until a
 knife inserted comes out clean.

Walnut Surprise Coffee Cake
2 cups flour;
1 tsp. baking powder ;1 tsp. soda;
1/2 tsp. salt ;2 cubes margarine ;
1 cup sugar ;2 eggs ;
1 tsp. vanilla; 1 cup sour cream ;
Sift the dry ingredients together and set aside.
Cream margarine with sugar and add eggs and vanilla.
Add sour cream alternately with dry ingredients.
 In a separate bowl, mix
1/3 cup brown sugar, packed; 1/4 cup white sugar ;
1 tsp. coffee; 1 cup chopped walnuts ;
Spread 1/2 the batter in a greased 9 x 13 inch pan.
 Sprinkle half of the nut mixture on top and repeat
with the other half of batter and nut mixture.
Bake at 350 degrees F. for 35 minutes.
This cake freezes well.

Amish Coffee Cake
3/4 cup sugar; 1/4 cup shortening;
1 egg; 1/2 cup milk ;
1 1/2 cup sifted flour; 1 1/2 tsp. baking powder ;
1/2 tsp. salt ;
Cream sugar and shortening and add the egg.
Sift together the dry ingredients and add
alternately with the milk.
Topping:
1/2 cup brown sugar ;2 Tbsp. flour ;
2 Tbsp. melted butter; 1/2 cup nuts ;
2 tsp. coffee ;2 Tbsp. water.
Mix together.
Spread 1/2 the batter in a square greased
 floured baking pan. Spread 1/2 of the topping
on and swirl. Repeat the steps again.
 Bake at 375 degrees F. for 30 mins.

My Favorite Spiced Apple Coffee Cake
1 cup sugar ;2 cups flour ;
1 tsp. baking powder ;1 tsp. soda ;
1/4 tsp. salt ;1/2 cup shortening ;
1 egg ;1 cup milk ;
1 tsp. vanilla ;4 or 5 chopped apples ;
Mix the dry ingredients and the shortening until
it becomes crumbs. Add the egg, milk and
vanilla and mix well. Lastly, add the chopped apples.
Pour into a greased 13 x 9 inch pan and add the topping.
Topping:
3 Tbsp. melted butter ;1 cup brown sugar, packed
1/2 cup flour; 1 tsp.coffee; 1tsp cinnamon;
1 cup chopped nuts ;
Mix together and spread over batter.
Bake at 350 degrees F. for about 45 mins.
