Pane Rustico, Italian Country Bread
Bread-machine Breads
Ingredients
2/3 c. cooked wheatberries
2 t. dry yeast
2 c. bread flour
1 1/2 c. whole wheat flour
3/4 t. salt
1 c. water
Directions
 Cook 1/4 c. wheatberries in 1/2 c. water. Bring to boil, reduce heat to low, cover, and simmer 30 mins. If all water has not been absorbed, drain. Makes 1/2 c. wheatberries. Cook amount needed for this recipe.
 Add all ingredients in order given by machine manual, process on basic bread cycle.

CHOCOLATE SPICED RUM BREAD (1 lb.)
Bread-machine Breads
Ingredients
3/4 c + 1 T milk
1 T spiced rum
1 t vanilla extract
3 egg yolks
3 T butter or margarine
2 c + 2 T bread flour
4 T sugar
1/3 c Dutch processed cocoa
1/2 t salt
3/4 t cinnamon
1/8 t allspice
1 T brown sugar
2 t yeast
Directions
Add all the ingredients to the machine according to the manufacturer's instructions. Bake on a "light" or "sweet bread" cycle. Remember, bread machine recipes work great baked in the oven.

APPLE BUTTER BREAD

Ingredients
1 1/3 c. water
2 2/3 tblspoons oil
2/3 c. apple butter
1 1/3 tblspoons sugar
1 1/3 tspns salt
2 2/3 c. bread flour
1 1/3 c. whole-wheat flour
2 1/2 tspns yeast
Directions
Place all ingredients in your machines fully assembled pan in the order specified by your machines manufacturer. Select the basic or white cycle and press start.

Potato Dill Baked potatoes keep this bread extremely moist with a long shelf life. The delicate interior structure will surprise you, the flavor enlivened by fresh dill. Great with tuna salad. Blueberry Walnut Bread

 Makes 1 - 2 pound loaf 
Prep Time: 10 Minutes
Cook Time: 1 Hr.
Ready in: 1 Hr. 10 Mins.
 " Delicious quick bread for bread machines. Blueberries, walnuts and just a little grated lemon peel for that extra zing
Ingredients    
1/3 c. margarine, softened
1/2 c. milk
2 eggs
2 1/2 c. all-purpose flour
1 c. white sugar
2 1/2 tspns baking powder
1/2 tspn baking soda
1 tspn salt
1 c. frozen blueberries, thawed, drained
1/2 c. chopped walnuts
1/2 tspn lemon peel (optional)
 Directions    
 In a large bowl, beat together the margarine, milk, eggs and sugar. Stir in the flour, baking powder, baking soda and salt. Carefully fold in the blueberries and walnuts.
 Fold in lemon peel if desired.
 Spray bread machine pan with cooking spray.
Pour mixture into bread machine pan and put pan into bread machine.
Select Quick Bread/Cake cycle, and press Start.
Check in 1 minute to see if mixture is well blended.
Cook until cake cycle stops.
Cool completely in bread machine pan before removing. 
 Makes 1 - 2 pound loaf

Cinnamon Raisin Swirl Bread

 Makes 2 - 9x5 inch loaves 
Prep Time: 10 Mins
Cook Time: 10 Mins
Ready in: 20 Mins
" Delicioso! Made using bread machine and normal oven, also usable without bread machine. Like a giant Cinnamon bun. "
 Ingredients:    
1 1/2 c. warm water
2 tblspns milk
2 tblspns shortening
1 tspn salt
4 c. bread flour
3 tblspns white sugar
2 tspns active dry yeast
1 c. raisins
2 tblspns butter, softened
2 tblspns brown sugar
1 tspn ground cinnamon
1 tblspn butter, melted
 Directions    
Place water, milk, shortening, salt, flour, sugar and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. 
 If your machine has a Fruit setting, add the raisins at the signal, or about 5 mins before the kneading cycle has finished. 
Take dough out after first kneading cycle has finished. Turn dough out onto a lightly floured surface and roll out into a rectangle. Spread dough with butter, brown sugar, and cinnamon. Roll dough, and divide into two parts. Place loaves in two lightly greased 9x5 inch bread pans. Cover and let rise in a warm place until doubled in size, about 1 hour.
Preheat oven to 350 degrees F (175 degrees C).
Brush tops of risen loaves with melted butter and bake in preheated oven for 30 to 40 mins, until crust is brown and loaves sound hollow when tapped.
Makes 2 - 9x5 inch loaves

HAWAIIAN COCONUT BREAD

      1 pk Yeast
      3 c  Bread flour
      2 ts Salt
      1 tb Sugar
    1/4 c  Nonfat dry milk powder
      1    Egg
    1/4 c  Butter
    3/4 c  Shredded coconut
    3/4 c  Macadamia nuts
    1/2 c  Crushed pineapple;well drain
    1/2 c  Pineapple juice, from the
           -above
    1/4 c  Warm water
 
  "Combines our favorite tropical tastes of coconut, macadamia nuts and
  pineapple. Close your eyes and picture the Hawaiian Islands."
 
  Have all ingredients at room temperature.
 
  Drain the pineapple, reserve liquid. Add all ingredients into the pan
  in the order listed above, pineapple and liquids last. Select white
  bread and push "Start."

  Unique is the word for this loaf.  Don't let the
  combination of ingredients scare you off -- the
  texture created by the feta cheese combined with the
  smallest hint of cucumber makes this a wonderful
  bread.  This is definitely a bread to accompany a hot
  meal.  It's recommended with char-grilled marinated
  lamb chops or your favorite lamb kabobs.
  SUCCESS HINTS:
  Cucumber should be peeled, seeded, and then pureed.
  If the feta cheese is packed in water, drain well.
  Finely chop the black olives.
  This recipe can be made with the regular and

Stromboli

1 loaf freshly made bread dough (or frozen dough)
Egg and milk wash (1 egg beaten with 4 tablespoons milk)
4 slices Provolone cheese

Ingredients for filling:

1 package pepperoni (30 slice package)
12-ounce package Mozzarella cheese, grated
1 package mushrooms, sliced
2 medium onions, chopped
2 bell peppers, chopped
Italian tomato sauce (optional)
Sprinkle of parsley
Parmesan cheese
Oregano

Preheat oven to 350 degrees. Punch out the air bubbles in the dough. Roll into a large rectangle on a slightly floured surface. Brush with the egg and milk wash. Place the remaining ingredients of your choice down the middle 1/3 of rectangle. Fold up the outer thirds (sides) of the rectangle over the center. Brush the top with remaining egg and milk wash.

Sprinkle with Parmesan cheese and oregano. Bake in oven on a greased baking sheet for 20 minutes or until lightly browned.

Yield: 6-8 servings.
