Creamy Chocolate Cookie Pie

 

Crust Ingredients:
1 3/4 cups (about 20) crushed chocolate sandwich cookies
1/4 cup butter or margarine, melted
Filling Ingredients:
1 (1-ounce) square semisweet baking chocolate
1 (5-ounce) package chocolate cook and serve pudding and pie filling
3 cups milk
6 chocolate sandwich cookies, quartered
1/4 teaspoon vanilla extract
Garnish Ingredients:
Sweetened whipped cream
  1. Combine 1 1/2 cups cookie crumbs and butter in small bowl; mix well. Press evenly onto bottom and up sides of ungreased 8 or 9-inch pie pan. Set aside.
  2. Melt chocolate in 2-quart saucepan over low heat (1 minute). Stir in pudding mix and milk with wire whisk. Increase heat to medium. Cook, stirring constantly, until mixture comes to a full boil (10 to 12 minutes). Remove from heat; stir in cookies and vanilla. Pour into prepared crust. Cover; refrigerate until set (3 to 4 hours).
  3. To serve, dollop individual servings with 2 tablespoons whipped topping. Garnish with remaining cookie crumbs.

Makes 8 servings.
