Epinards a la Creme:[Creamed Spinach]
 2lb. Spinach
 4tbps Butter
 Salt & Freshly Ground Pepper
 1tbsp Flour
 Scant Pinch of Sugar
 Nearly 1/2 Pint Cream.
 Boil & drain spinach.Melt 3tbsps butter in pan,add spinach,cook over high heat for 5 mins. 
 Add seasoning,sugar & flour,mix well stirring for 2mins. Remove from heat and then stir in 
 cream .Now reheat placing lid on pan -simmer gently 20 mins. Place creamed spinach in 
 warm serving dish - dot with leftover butter & serve with croutons as a garnish.
