Stove_Top  Panned Brunch :
1 tin spaghetti .410 gms.
1 chopped onion  med size.
1 diced kidney .
 oil
frying pan .
Take your pan add some oil, drop the chopped
onion into it ,fry till tender on element ,
add the kidneys , mix well covering with onion
and oil .when onions are well done, add the tin
of spaghetti to the kidney and onion mixture .
Heat till nice and hot ,
pour over toast or add to cheese rolls or buns .
makes for a nutritious brunch .
 *a dry  fried egg can be added too  on the side .
with hot chilli sauce

Egg in a Basket
Serving Size: 1
Ingredients:
1 slice bread
1 egg
butter
Preparation:
Place a skillet on medium low heat.
Cut cicle out of bread slice using a biscuit cutter,
or small juice glass. Butter both sides of bread,
and the circle that was just cut. Place buttered bread
pieces into pan. Crack an egg, and place it inside
 the hole.
Once the egg has cooked almost all of the way done,
flip and brown the other side.

Spooky Jacket Potatoes
Serving Size: 8
Notes:
Everyone enjoys twice baked potatoes.
Ingredients:
4 medium sized potatoes
2 Tbsp. butter
1 Tbsp. milk
2 Tbsp. sour cream
2 Tbsp. grated cheese
1/2 tsp. salt
Black Olive (slices)
Preparation:
Preheat oven to 400 degrees.
Score potatoes with your fork.
Bake for 25 to 30 minutes or until the potatoes are
cooked through.
Remove potatoes from oven, and allow them to cool.
When potatoes are cool enough to handle scoop out
the centers, be sure to leave 1/2 inch or so around the
sides so the potatoes stay whole.
In a bowl place all remaining ingredients, and the scooped
out potatoes. Mix potatoes through. Place the mashed
potatoes in the potato jackets.
Dry black olive slice with a paper towel.
Cut slice into tiny pices.
Place slices on potatoes two pieces for the eyes,
and one for the nose.
Place potatoes back in the oven and bake for an
additional 15 minutes.

Cinnamon Toast
4 slices wholemeal bread
2 tablespoons margarine or soft butter
1 teaspoon cinnamon
3 tablespoons Chelsea Caster Sugar
Preheat the oven grill.
Place two slices of bread together and toast
in a toaster (two slices in one slot) so that only
1 side of each slice is cooked. Lay the bread
toasted side down on an oven tray.
Mix the margarine, cinnamon and sugar together
and spread on the un-toasted side of each slice of
bread. Place under a hot grill for 2 �?3 minutes with
the oven door open. Watch carefully as the bread
toasts up crisply and golden and the cinnamon sugar
mixture bubbles and melts. Carefully remove from the
oven �?don't forget to turn off the grill.
Cool for about 2 minutes then cut the toast into quarter
triangles and eat.
Preparation time: 4 minutes
Cooking time: 3 minutes
Serves 2

Pikelets
Ingredients
1/2 cup milk
1/2 teaspoon vinegar
1 cup flour
3 tablespoons Chelsea White Sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1 tablespoon butter (melted)
1 egg
Method
Mix milk and vinegar in a cup and set aside to sour.
Sift all the dry ingredients into a large bowl.
Add the eggs to the sour milk and whisk.
Add to dry ingredients and whisk well until smooth.
Add melted butter, stir in.
Rub frypan with a little N.Z. butter and heat on medium.
Drop tablespoonful lots of the mixture into the hot frypan.
When bubbles show flip over and cook other side.
should be a light brown color .

If its nearer lunch than breakfast -
here is a good easy peasy salad to make:
be careful cutting though .
Mexican Tomato Salad
2 large tomatoes, chunky pieces
1/4 c. lemon juice
1/4 c. cilantro, diced
1/2 c. cucumber, coarsely chopped
1/2 onion, diced
1/4 c. sliced olives
Combine all ingredients. Allow marinating at least
one hour to develop flavor. Serve chilled. Serves: six.

Corn Fritters  
Great for lunch or make little ones to serve as
a finger food snack.
1 X 410 g can cream-style sweetcorn
1 cup self raising flour
¼ cup low fat milk
3 eggs, separated
salt and freshly ground black pepper to taste
2 tblspoons chopped parsley
5 tblspoons oil, to cook
In a large bowl, mix the cream style sweetcorn,
flour, milk, egg yolks, salt and freshly ground
black pepper and parsley together.
In a separate bowl, beat the egg whites until
stiff and fluffy. Fold these gently into the corn
mixture.Heat the oil in a large non stick frypan
over medium to high heat.
Cook spoonfuls of mixture for approximately
3 minutes each side until puffed up and golden
brown. Drain on paper towels.
Keep warm in the oven while you cook the remainder
of the batch. Serve with chilli sauce, tomato sauce
or salsa.
Prep time: 10 mins;Cooking time: 30 mins ;
Makes: 8 �?10 good sized fritters or
 20 little finger food ones.

teach your child how to make these
BLUEBERRY HOT CAKES
1 cup flour
1tsp baking powder
2 size 6 eggs
1 tbsp oil
milk
1 punnet fresh blueberries, rinsed and dried -
can use frozen blueberries, slightly thawed
Place flour, baking powder, eggs and oil in a bowl.
Add enough milk to make a smooth batter,
consistency of whipped cream.
Fold in the blueberries, mixing to distribute evenly.
Heat a large heavy frying pan over low/medium heat.
Grease lightly. Cook like pikelets.
Serve dusted with icing sugar and a few extra
blueberries mixed with icing sugar.

EasyPeasy  breakfast
1 large egg, lightly beaten  ;
1 slice chesdale cheese  (1/4 in. thick), cubed; 
Pepper; 
3 slices  Ready to Serve Bacon ;
2 slices whole wheat bread, toasted ;
1 Tbsp. strawberry jam; 
1/2 of a medium seedless orange; 
SPRAY small microwavable bowl with cooking spray.
Add egg and cheese ; mix well. Season with pepper to taste.
Microwave on HIGH 30 seconds; stir. Microwave 10 to 15
seconds longer or until egg is set and no visible liquid remains. 
MICROWAVE bacon as directed on package.
Meanwhile, toast bread slices; spread with jam. 
SERVE eggs, bacon and toast with the orange.

Chilli Sausage Sandwich:
1 tsp. vegetable oil; 
1  Italian Sausage, cut into 1/2-inch-thick slices; 
1/4 cup chopped green pepper ;
 2 eggs, beaten ;
2 crusty sandwich rolls, partially split; 
Hot chilli  sauce.  [go easy on the sauce for the children]
HEAT oil in nonstick skillet on medium heat. 
ADD sausage and peppers. Cook 3 to 5 minutes or
until lightly browned, stirring occasionally.
Add egg ; cook and stir 2 minutes or until egg is set. 
SPOON evenly into rolls. Season with hot sauce to taste.

Fried toasted bread .
 
Who can resist  "fried toasted bread ."
a couple of slices of brown bread in a pan of  hot oil.
just enough to soak up without being too oily.
heat thru till browned on one side  then turn over
and do the same ,When done, slide onto plate and
add your favourite relish or sliced cheese on top 
or add Watties tomato sauce .
[truly the best one for snacking ]
or a
Cheesy quick breakfast ..

Sandwiches
Bay Area Classic Ham Sandwich
6 slices (6 ounces) ham, sliced thin
4 slices sourdough bread
2 tablespoons reduced fat herb-flavored cream cheese
1/2 cup lettuce, shredded
2 Roma tomatoes, sliced thin
2 tablespoons sliced banana peppers
Toast bread; spread one side of each slice
with cream cheese. Lay ham on two slices
of bread. Top with lettuce, tomatoes and
banana peppers; add remaining bread.
Cut each sandwich in half and serve. Serves 2.

Really nice roast lamb sandwich
Ingredients
Several thin slices cooked New Zealand Lamb
Full fat soft cheese (such as Philadelphia)
shredded lettuce
4 cherry tomatoes, sliced
4 tsp mint jelly
4 thick slices wholegrain bread
Method
Spread soft cheese on each slice of bread.
Top two slices with shredded lettuce and tomatoes.
Spoon over a little mint jelly and top with cold roast lamb.
Finish with remaining bread, cut in half and serve.
Serves: 2 .Preparation time: 5 minutes

Banana Sandwiches.
two slices of fresh home made wholemeal bread,
spread with either butter or margarine,
one sliced ripe banana added as a filling and
you have an exclusively New Zealand way of lunch.
 
I often add a sprinkling of sugar as I have a very sweet tooth

 Asparagus Sandwich  
1 can (small) asparagus
2 x Hard-boiled eggs
1 pkt (4-oz) cream cheese
    Seasoned salt
    Parmesan cheese
    Butter
4  sl Bread [? up to you ]
Method :
Combine asparagus, eggs & cream cheese.
Mash together; season with seasoned salt.
Butter outside of bread. Spread mixture in middle.
Sprinkle outside of buttered bread with Parmesan cheese
& put under broiler to brown.
Turn over, butter bread & sprinkle with Parmesan cheese.
Brown. Cut in half diagonally.

A Filling Luncheon sandwich           
pickle or chow chow -for meat
butter to spread on
1 fresh white bread
1 whole grain bread,
then add any tasty meats, coleslaw or salad,
a dash of mayonnaise, and a filling lunch for
one is yours.
