L'Agneau Roti Persillade:[Roast Lamb Persillade]
Rub leg of lamb with freshly ground pepper and place in hot oven for 15 mins.
Sprinkle with coarse salt and reduce heat to moderate.When the lamb is nearly cooked
-about 20 mins. before serving-press over the meat the crust made from the following
1&1/2 cups fresh White Breadcrumbs;1oz Oregano;1ozSweet Basil;1oz Thyme;
2/3 cups freshly chopped Parsley.
Method: Bind together with olive oil so it will adhere when stuck together.now coat the
roast lamb with this and return to oven till crust turns golden brown.
Serve garnished with watercress and red currant jelly on the side.
