Cabbage roll ups:


Ingredients

1-2 tblsp. oil
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely grated carrot
1 medium head of cabbage (about 2 1/4 lbs.)
15 oz can diced tomateos pureed
2 tblsp. brown sugar
3 tbsp uncooked rice (1/2 cup cooked)
2 tblsp. minced green onions or grated onion
1 tsp. salt1/4 tsp. pepper
1lb. ground turkey
1 tblsp. lemon juice

Procedure

In skillet heat oil, addcarrots, onions, celery, cook till softened. Remove core in cabbage, add to boiling water and cook till soft.  Drain and cool.  Add tomatoes, and brown sugar to skillet.  Cook about 20 minutes.  Add rice(cooked) to ground meat with seasonings, blending well. Cutting rib from cabbage leaf, place 2 tblsp. meat mixture on cabbage leaf roll up and secure with pick if needed.  Stir lemon juice into tomate veggie mixture.  Place cabbage rolls into skillet in tomatoe mixture. Cook covered over low heat one hour checking now and then so they dont stick. Can also cook in microwave  on kmedium power for 15 minutes.  I would suggest covering with waxed paper, in microwave.
