Roast 1 small pot roast 1 quart tomatoes 1 or two small cans tomato paste 1 large onion, chopped 1 bell pepper, chopped 3 celery, chopped 2 cloves garlic, chopped 2 tsp. sugar and salt, or to taste 1/4 tsp. nutmeg, cinnamon, allspice, cloves, sweet basil, marjoram, ginger, Italian seasoning
Brown roast, on all sides in a roasting pan, until brown. Remove roast from pan. Add onions until browned add bell pepper, celery, and garlic. When brown, add tomatoes, tomato paste, sugar, and salt. Add spices, return roast and simmer 4-1/2 to 5 hours or until roast falls apart. Serve over cooked spaghetti. Very good.
