Cuban Mojo
1/2 cup olive oil 6-8 cloves garlic, finely chopped 3/4 cup juice of bitter oranges, lemons, limes, or grapefruit 1/2 tsp ground cumin Salt and freshly ground pepper to taste
Heat the oil in a deep pot over moderate heat. Add the garlic and cook until fragrant but not brown, 2 to 3 minutes. Remove from the heat and cool for about 5 minutes before stirring in the remaining ingredients.
Serve at room temperature. Will keep covered and refrigerated for 3 days.
