Home made noodles is a family favorite. They really aren't hard to make just a few things to be aware of.
I use basically the same recipe for dumplings as I do noodles with one differance.
For dumplings you want a dough misture more most or airy and slightly sticky. When I make dumplings they are usually dropped by teaspoonfuls into soup beans or potato soup.
Noddles you want your batter more stiff and not sticky. When youroll the booodles out be sure to use a well floured service and cut into strips that are not too wide. After you cut them put in apile put more flour on them and toss the noodles in the flour. This is to keep them from reforming into a lump. The center of the noodle is still on the sticky side. Cut all your noodles before adding them to your stock. Alwas have your stock or what ever you are adding your noodles or dumplings to boiling before addig them. Drop into liquid loosely and not as a huge dropping or all at once. This is something that you do need to stir often. The flour texture and coating will cause the to stick if you are not careful. Even with a huge batch of noodles it does not take them long to cook. You want to avoid over cooking as this can make them doughy.
You can also freeze home made noodles. It does take a little space for this as you need to let them set at least 24 hours to dry. Once dry you can put them in ziplocks and freeze. What I like to do is whn making noodles up is to make extra and let them dry and then freeze then for later use. I also like to put them ina couple of ziplocks. I will put a bag of noodles into another empty bag,as this decreases the time that they can become frezzer burned.
Making noodles became a family project. My next to oldest boy would roll them out and cut them after I mixed. The last time I was home my grandaughters and I made noodles together. They both helped to mix them up and then the older withmy supervision cut them and the younger one would toss them with flour.
