Lemon Pineapple Upside Down Bites

1 box Lemon Cake Mix

3 eggs

1/2 cup water

3 tablespoons butter, (softened or melted)

1 can sweetened condensed milk, divided

20 oz pineapple purred

1/4 cup brown sugar

1 cup walnuts chopped fine

preheat oven to 350 degrees

Mix together cake mix, 3 eggs, 1/2 cup sweetened condened milk, 1/2 cup water.

Mix together pineapple, 1/4 cup brown sugar, and 1/4 cup sweetened condensed milk.

Spray mini muffun tins with favorite baking spray.

In mini muffin pans sprinkle nuts, top withabout a half teaspoon pineapple mix, top with cuke mix to top of pan.

Bake 10 mins in a 350 degree oven. Remove let cool and remove from pans.

If you desire top with a glaze of melted orange marmalade jelly.

This is a new recipe I created to night.

It is easy, just takes a little rep work. The two hardest parts was standing there fillling the pans and the second was removing them from the pans.

The lemon cake mix & purred pinapple mix made them just a little different than your average upside cake. We are serving finger foods at church so I went with bites instad of a cake or muffins.

How ever if you want to do a cake or muffins just follow the baking time on the mix. Using the mini muffin pans I found it only took 10 mins for them to cook.

I haven't tried them yet but Tim and Tammy did. Tammy's comment was "these are good' and Tims was, When you were putting these together I din't think much of the idea, I didn't think they would be any good. But they came out great."

I would definetly make these again or do a variation maybe using a different fruit.

Some positive comments to add to my previous comments. This was comments before, after, and durning the reception after church yesterday where I had taken the Bites.

1. Before - Tim ate one that busted when we were taking them out of the pan, his comment was while they were good last night they are even better today after they sat all night.

2. At Church - they are so moist

3. At Church - These are great

4. At Church - Can I have your recipe?

5. At Church - and several that was just these are good.

6. At home later in the evening - Christine finished the ones that were left, Lauren complained becaue they werent any more and Tim asked if he got the stuff would I make more.

So by all these comments I take it they were a success!

For some reason, it strikes me that if you wanted to make these for a "formal" occasion, do cream cheese & powdered sugar topping. Wow ~ I gotta make these & then freeze them. Using the mini cups is great for this time of year.
