Ham n' Cheese:
Ingredients:
1/2 c. chopped onion,
1 tbsp margarine,
1 1/2 cs. chopped celery,
1 c. uncooked rice,
2 cs. chicken broth,
1 tbsp sugar,
1 tsp salt,
1 tsp curry powder,
1 cu. cubed, cooked ham,
1 can (8 1/4 oz) pineapple chunks,
1 c. cubed cheddar cheese.
In a large oven proof skillet cook onions in butter until tender crisp. Add celery, rice, broth, seasoning and ham. Bring to a boil. stir well, cover and bake @ 350 for 25 minutes or until rice is tender and liquid is absorbed. Remove from oven. Add pineapple and cheese. Toss lightly. Serve.
