Fruit Salad With Banana Dressing - 8 Servings Lemon yogurt and a banana make us this dressing. Try it on other fruit salads as well. INGREDIENTS - 8 cups cut-up fruit, such as papaya, banana, strawberries, star fruit, cantaloupe, honeydew, mango, kiwi fruit, and/or blueberries
- 1/4 cup toasted chopped walnuts
- 2 medium bananas, peeled and sliced
- 1 8-ounce carton lemon low-fat yogurt
- 2 tablespoon sugar
- 2 teaspoon lemon juice
- 8 lettuce leaves
DIRECTIONS - For dressing, in a blender container combine sliced bananas, lemon yogurt, sugar, and lemon juice; cover and blend for 15 to 20 seconds or until smooth. Chill dressing, covered, for up to 2 hours. To serve, line salad plates with lettuce; arrange fruit on top. Top with dressing. Sprinkle with walnuts. Makes 8 side-dish servings.
