Ingredients; 3/4 cup chopped onion 1 clove garlic, minced 1 tablespoon olive oil 2 cups Vegetable broth Or one 14-ounce can beef or vegetable broth.(i used beef-low salt one) 3/4 cup dried lentils, washed one 16-ounce can diced tomatores with juice 1/4 to 1/2 teaspoon crushed red pepper flakes(if you do not like a little spice, use 1/4) 1/2 teaspoon salt 1 tablespoon chopped fresh basil, or 1 tsp. dried basil 1 tablespoon chopped fresh oregano, or 1 tsp. dried oregano 1/4 freshly ground pepper Directions; In a heavy saucepan, saute the onion and garlic in the olive oil for 5 minutes, until the onion is tender. Add the broth and lentils. Cover and simmer for 30 minutes. Add the tomatoes with their liquid, 1/2 cup water, and the remaining ingredients; simmer over low heat, uncovered, for about 45 minutes, stirring occasionally. Add water if the mixture becomes too dry. This was delicious last night! Smells wonderful, we had it with a Spinach, White Bean and Bacon Salad with Maple-Mustard Dressing! Of course one slice of Sun-dried tomato bread! Should have left that bread off! LOL. Hope you might enjoy it! Lots of good fiber!!! Nutritional Information Per Serving. (about 2/3 cup) Calories: 131, Fat:3g, Cholesterol: 0mg, Sodium:324mg, Carbohydrate: 20g, Dietary Fiber: 8g, Sugars: 5g, Protein: 8g. |

Thank you for posting this recipe cuddles! I bought some lentils, so I may just try this tonite or tomorrow, if I can beg some broth from my mil, that is, or could you use chicken broth? Blessings, Cathy |

Hi Cathy, like I said on recipe I used the low sodium beef, guess in a pinch you could try the chicken, if mil is greedy today, LOL LOL. I have a couple of lentil recipes, but so far this is one of my very favorites!!!! Let me know if it comes out good, o.k.??? Keep smiling, Cuddles |

Cuddles, I made the Lentils Italiano on Friday night. IT WAS GREAT! I made a double batch and we ate it again after skiing yesterday. You have some great recipes. No spikes in the blood sugars after that meal either. I spiced it up a little with crushed chilli peppers (1 tsp), and the second day we added some low fat turkey sausage (carnivore hubby) when reheating. Thanks again, you are a fabulous cook. Tammie, good to hear that the Chicken Fajitas are tasty. I will definitely try them. Keep on sending those delicious recipes. Rebecca.

Cathy, I used low sodium chicken broth and it tasted great. I do recommend putting in all the spices and we added some turkey sausage as well on round two the next day. YUMMY, and the real bonus NO spike in BG after the meal. Rebecca

Bumping up,,,, hoping Susie might give it a try,,,, lol,,,,,, this was the first lentil recipe I ever used,,,,, never thought I would like them either,,,, but I did,,,, and as others said,,,, adding some Turkey Italian Sausage really makes it yummy,,,,,, and do put all the crushed red pepper flakes in,,,,,, We use a hot Italian Turkey sausage sometimes to go with it,,,, But not everytime,,, the lentils alone have alot of protein in them,, Try it, and hope you like it!! cuddles |
