I would like to know if I can eat foods like speghetti, potatoes, rice...ect....

I forgot if you were T1 or T2.  In either case, the only way to know for certain is to test your blood sugar before attempting any food.  And follow up by testing 2 hours afterward.  The bulk of the carbohydrate is usually absorbed in that time, and will be exhibited in your blood sugar.  If you notice a sudden spike in your sugar, then you know it is not a good choice for you.
There are websites on the "glycemic index," which will show the amount of sugar that is supposedly absorbed into your blood system once any given food is digested.  But things are never as black or white as that.  We all react differently to various foods.  Other factors also play a role, including the about of fat eaten in a meal, the amount of fiber, and individual rates of metabolism.  Yep...pretty tricky figuring these things!  If only it was easy to be diabetic!
In a T1, it is easier to adjust blood sugars with insulin.  In T2, you can always go for a long walk to help lower your sugar...but easier and safer to avoid foods that cause a big spike in your levels.  If it is a special food for a special occasion, moderation is always wisest.

well, I had a few roasted potatoes with carrots a few moments ago, my bs was 60 before I ate, so I will see in a couple hours....I hope that I can still enjoy the potatoes, ....

oh, Dr. did not tell me if I were 1 or 2, however when checking out the meds he gave me on the internet, they are for type 2 diabetics....so I guess I am type 2....

Prango....sheryl's words are the ones that I know..... I gave up all white starchy foods about 5 yrs. ago as they didn't react well with my diabetes.... I still eat brown rice but that is it as far as starches go.... and as sheryl said, if you test a couple of hours after you eat what you will, you'll be able to see that pattern that your bs's take.  That's all you can do....eat, test and remember what the result was....it just takes time.  see ya. well, after two hours, I tested and was 108., and again 2 hours later just to make sure, bedtime, and it was still 108,....so the potatoes did not hurt me..but I will not make a habit of eating them, I just need to eat one once in awhile....tee hee..

That 108 2 hrs later seems right on target.
 
Try it again.. the taters with whatever you are with them and you will have an idea of what is going on.
