I make cupcakes that are delicious little one point desserts. I am not sure if you have heard of this or not but I will share it with you. You simply take an Angelfood cake mix and add one big can of crushed pineapple or a can of comstock lite cherry pie filling...mix and put into muffin tins and bake. Nothing else thats it! Two cupcakes are one point! They are delicious! I serve them with a tablespoon of sugar free coolwhip and 3 blueberries as a garnish...my family is nuts about them. They have no idea they are eating diet food! LOL
Also if you like spicy chicken...
I throw chicken breasts in my crock pot and cover them with salsa and let them cook all day on low. The salsa is free the chicken is one point per ounce. I usually serve it over black beans and rice with a dallup of lite sour cream. You of course can figure your points for the sour cream...I believe fat free is free but I prefer the light. Sometimes I even add the little carrots to the crock pot. Sometimes I add a can of Fiesta corn to the rice and beans. If you like spanish foods at all this is a simple meal that everyone loves.
