As soon as dinner is over you strip the turkey of all white meat, we dont eat dark. then the dark meat and the carcass goes directly into the stock pot. that way you never waste the carcass and the stock cooks while you relax over coffee and pie.
 
Now for the other leftovers. Here is my absolute favorite. in a fry pan put a bit of turkey, a bunch of stuffing, leftover mashed taters, left over veggies (beets this year) put a small amount of water in the pan to moisten the dressing and make the taters nice. cover and cook till hot. then pour gravy on the edges or middle of the pan. and return cover and heat till hot. then put it all on a big plate or bowl and have a feast.
I actually think i may like this part bettter than the original dinner.
 
And i would tell you what to do with the leftover jello but ooops i jsut ate it all.

Turkey noodle casserole!
 
I use the dark and the white meat. I'm colorblind so it doesn't really matter to me.....
 
I bake the casserole with Ritz cracker crumbs on top..... YUMMY!

Darn nacho, youre too late my leftovers are not leftover anymore. sister divided them between the three of us and i ate the last of mine yesterday. Sigh
 
 
I was jealous, because i was sick i didnt go to dinner, she did send left overs, but she got to make the turkey stock. Yummm i love that.  and was jealous she got it all, but i spoke to her last night and yesterday morning she accidentally hit the container in the fridge and it fell out and spilled all over the kitchen floor. What a mess and you know how greasy turkey stock is before you degrease it. And its a huge amount. Poor thing had to clean it all up. And lost all the wonderful stock.

We always make turkey croquettes with the leftovers.....kinda a traditional thing in our family for the next night's dinner.

We only get a turkey breast so we don't have that much leftovers; we eat on it a couple of days and then put the rest in the freezer.  My sister and I both work all day, and then have dinner with Mom.  We never know what she's gonna have in mind for dinner, sometimes she cooks and sometimes we go out (it's her choice, since she's the one that has to do the work if she cooks).  It's so nice to come home one cold evening (even if it's not cold) in January or February to a nice hot turkey dinner!
 
She gets a spiral sliced ham from the regional grocery chain (I've mentioned it before, H.E.B.) for Thanksgiving every year.  After she heats it for the dinner, she divides the meat in half, and we freeze the other half for later.  She cuts the chunks of ham off the end of the bone and we freeze several packages of that for cooking with beans.  We eat ham for Thanksgiving dinner and then have sandwiches until it's gone (after we send a pile of it home with my brother for his lunches).
 
The turkey breast and the spiral sliced ham work out perfectly for the four of us.  There is almost NO waste.

Our leftovers are all gone now too but I will remember all these when we do another Turkey.  I don't know if we will do one for Christmas or not.  We normally do thought but not New Years Day.

For us christmas is ALWAYS ham. And if we can kielbasa and kraut of if we are really rich and ambitious city chicken oh baby baby love that city chicken
