I've never been able to get my rice pudding to come out very well.  My 2nd-ex is coming over for dinner on Friday night (we've remained good friends) and instead of buying Kozy Shack Rice Pudding like I usually do for him because it's his favorite dessert, I thought I'd give making it myself another shot.  So, HELP, any good recipes that you can absolutely guarantee will amaze everyone that I'm so talented  and Queen of the Rice Puddings!

Beth, I'm not any kind of a rice eater but my son is and he loves to cook so I asked him and he said try this... He said although it looks like alot, it's fast, simple, easy and delicious.  It must be because he makes it all the time for our family.
 
1/2 cup golden raisins
1 cup boiling water
1/3 cup slivered almonds
3 1/2 cups cooked medium or long-grain rice, at room temperature
2 1/2 cups milk
2 1/2 cups heavy cream
2/3 cup sugar
Pinch salt 
1 1/4 teaspoons pure vanilla extract
1 teaspoon ground cinnamon 

In a bowl, place the raisins and cover with the water. Let sit 5 minutes. Drain.

In a skillet over medium heat, toast the almonds until golden , 3 to 5 minutes. Remove from the heat.

In a large saucepan, combine the rice, milk, cream, sugar and salt. Bring to a simmer, stirring, over medium heat. Reduce the heat slightly to maintain a low simmer and cook uncovered, stirring frequently, until the mixture starts to thicken, about 30 minutes. Continue to cook, stirring occasionally to prevent the rice from sticking, until a spoon is just able to stand up in the pudding, about 5 minutes. Remove from heat and stir in the raisins, almonds, and remaining ingredients.

He said if you want to skip the almonds it tastes good without them too.

Our son cooks all the time and loves watching the Food Network.  With his large family he has and my DIL not liking to cook and not being a good cook, well to be honest, she's terrible in the kitchen, he has been the one to do the cooking in his family.  He's a big fan of Paula Dean and tries many of her recipes.

Thanks, Dee, and Dee's son.....I wouldn't of thought to use the golden raisons, I'm going shopping tomorrow and will pick them and the heavy cream up.  I'll let you know how it comes out....thanks so much.
 
BTW, I'm a fan of Paula Deen's, too, and watch a lot of Food Networks shows.  Did you hear Emeril is leaving FN early next year.....man, he's been there forever that I'm surprised he's decided to move on.  I wonder if he plans on doing a network show like Rachael Ray's.

from what i read emerils contract was NOT renewed, as opposed to him choosing to leave. So it appears he was cancelled but its only how it appears.

 I had not heard that about Emeril.  I like him okay but he is not one I watch all the time like I try to do when Paula is on.

Our local paper today said FN was continuing with the Essence of Emeril show but not the Emeril Live program; that one wore on my nerves too, I just didn't care much for his personality in front of a live audience.

What always bugged me about Emeril's shows is that he never gave measurements.....lots of BAM's but not teaspoons.
 
He's rolling in dough from all the tv, books, products, and restaurants so you can't feel too sorry for the guy.
 
I like the winner of The Next Food Network Star from two contests ago....Guy Fieri.  The other winners, the two gay guys and the latest, the woman with the Elvis lip thing going on haven't done as well as Guy mostly because they just don't have the personality to pull it off.

Almost all of them do not give exact measurements on the actual show (I can't recall any right offhand that do); all the recipes from all the shows are available on foodnetwork.com.

Yeah, I like Guy too, I didn't care for this latest female winner, nor the winner of the Next Iron Chef, I really wanted 'Big Country' Besch to win, the guy who won reminds me too much of Salmon (was it Michael?) from the last Next Food Network Star.

I like Kitchen Nightmares with Gordon Ramsey, on the BBC and Fox i think. Hes funny and intense and swears a lot when trying to turn failing restaurants around

Beth, I totally agree with you about the woman and the two guys.  I just couldn't get myself to watching either of them.   I guess i'm just stuck on my favorite of Paula Dean and Rachel Ray and Semi-Homemade with Sandra Lee.  The Italian gal,  Gilda I think is her name.... Her mouth drives me nuts.... All you see is her mouth and teeth cause her mouth is so huge.  I know that's probably a cold thing to say but she just bugs me with that huge mouth.  At least it looks huge to me.

Dee, Sandra Lee is just too sweet and her 'tablescapes' are sometimes too cheesey but her semi-homemade recipes are usually pretty decent.  We get the biggest kick out of how she always seems to end the show with making a drink....and looks so sappy when she takes a nice long swig, lol.  And how about when she makes a non-alcoholic drink for her nephew and then adds liquor to hers saying 'and this is how Aunt Sandy likes them'.....too funny!
