HOT CROSS BISCUITS
Ingredients
2 cups of all-purpose flour
1 Tbsp of packed brown sugar
1/2 tsp of cinnamon
1/4 cup of butter
1/3 cup each of currants and cut mixed candied orange or lemon peel
4 tsp of baking powder
1/2 tsp of salt
1/2 cup of shortening
3/4 cup of milk
Directions:
In a bowl, mix together flour, baking powder, sugar, salt, cinnamon.
Using pastry blender or two knives, cut in shortening until mixture resembles coarse cornmeal.
Stir in currants and peel.
Add milk all at once, stirring with a fork to make soft sticky dough.
Turn out onto floured surface; Pat into half-inch rounds, re-rolling scraps once. Knead lightly about 10 times.
Pat or roll dough into ½ inch thickness, place on ungreased baking sheet, score an "X" on top of each.
Bake at 425 degrees - 12 to 15 minutes or until lightly browned.
Makes 18 biscuits.
