   3                    Tart Apples, Such As Granny Smith
                        Peel/Halve/Slice (3 Cups)
     1/2  Cup           Butter
   2      Large         Eggs
     1/3  Cup           Milk
   2      Tablespoons   Rum
   2      Teaspoons     Vanilla Extract
   2      Tablespoons   Finely Chopped Pecans
   1 1/2  Teaspoons     Baking Powder
   1 1/2  Teaspoons     Baking Soda
   1 1/2  Teaspoons     Salt


  Preheat the oven to 350 degrees. Brush the sides of a 8 x
3 1/4-inch springform pan with the melted butter. Mix      
together 1/2 cup sugar, cinnamon, nutmeg, and 1/4 cup flour
and sprinkle the mixture evenly over the bottom of the pan.
Wrap foil around the pan to prevent leakage.  Starting at  
the outside edge, arrange a ring of apple slices in the    
pan, slightly overlapping and pointing to the center. (It  
will feel backwards.) Fill in the center with another      
circle of apples, with some overlap occurring. Layer any   
remaining apple slices evenly, overlapping to prevent the  
batter from escaping. With a wooden spoon or electric      
mixer, beat together the butter and 1 cup sugar. Add the   
eggs, milk, rum, and vanilla. The batter will look curdled.
  Add 1 1/4 cups flour, the nuts, baking powder, baking    
soda, and salt, beating only until the flour is completely 
incorporated. Pour the batter over the apples and spread   
evenly. Place the pan on a baking sheet and bake in the    
middle of the oven until a toothpick inserted in the cake  
comes out clean, about 70 minutes. Cover with a piece of   
foil if the top begins to brown too quickly. Let the cake  
rest in the pan on a rack for 5 minutes, then, using a     
small, flexible knife, gently separate the sides of the    
cake from the pan. Invert the cake on the rack, letting it 
stay in the pan for another 10 minutes,then remove the pan,
lifting it up carefully.

   8                    egg whites
   3      c             grated peeled apple -- about 2 large apples
   2      tbsps         lemon juice
     1/2  c             sugar
   1 1/2  tsps          cinnamon
     1/2  tsp           vanilla extract
   1 1/2  c             sifted flour
     1/2  tsp           salt
     1/2  c             finely chopped nuts -- optional
   1      c             minced cranberries -- optional
                        powdered sugar -- for topping



1) Preheat oven to 350 degrees F.  Generously oil a 9-inch square pan & dust
with flour.

2) Place the egg whites in a large bowl, and beat with an electric mixer at
high speed until they form sturdy peaks.

3) In another large bowl, combine apples with all remaining ingredients
(including optional nuts & cranberries) & mix well.

4) Use a rubber spatula to fold the beaten egg white into the apple mixture
until fairly well combined.  Transfer to the prepared pan, and bake about 30
minutes - until a probe comes out clean.  Cool before slicing.  Serve plain
or dusted with powdered sugar.

                            Apple Crumble Cake

   2      cups          flour
   1      cup           brown sugar
     1/2  cup           quick cooking oats
     3/4  cup           butter -- melted
   1      cup           sugar
   3      tablespoons   cornstarch
     1/4  teaspoon      salt
   1      cup           water
   1      teaspoon      vanilla
   6                    apples, peeled -- cored, sliced

Mix together flour, brown sugar, oats, butter. 
Spread half of mixture in 9 x 13 pan.  Pat down. 
Combine sugar, cornstarch, salt and water in saucepan. 
Cook over moderate heat, stirring until thickened.

Add sliced apples and vanilla.  Stir to coat well. 
Spread evenly over crumbly mixture in pan.  Top with remaining crumbs. 
Bake in 350 oven for about one hour. 
Try a scoop of vanilla ice cream on top.

                     Apple Dabble Cake with Frosting

   1      teaspoon      Vanilla

Mix well.  Bake in a tube pan for 1 hour at 350 degrees.

Frosting: 1 stick of butter 1 cup light brown sugar 1/4 cup milk
Mix and let boil 5 to 10 minutes.
Pour over cake while hot and let stand for 2 hours.

   1                    Egg -- well beaten
   1       c            Flour
   1       t            Soda
   1       t            Cinnamon

   1       c            Chopped pecans or walnuts

  Mix sugar and apples.  Add egg when sugar is dissolved.  Sift flour,
  soda and cinnamon together.  Add to apple mixture.  Add vanilla and
  nuts. Pour into greased and floured 8 inch cake pan.  Bake at 375
  degrees for 40 minutes.
 
  HOT BUTTER SAUCE: Pour over hot cake.
 
  1/2 c. sugar
  1/2 c. light brown sugar
  2 tbsp. flour
  1 c. water
  1/2  c. butter
  1 tsp. vanilla

  Combine first 4 ingredients.  Bring to a  boil until clear.  Add butter
and   vanilla, stir until butter is melted. Delicious but rich!

   1      teaspoon      Cinnamon
   1      cup           Cooking oil
     1/4  cup           Orange juice
   3      cups          Sifted flour
     1/2  teaspoon      Salt
   3      tablespoons   Sugar
   2      cups          Sugar
   4      each          Eggs
   2      teaspoons     Vanilla
   1      tablespoon    Baking powder

Peel, core, and chop apples into small pieces.
Mix together with 3 tablespoons sugar and cinnamon.
Set aside.  In large bowl, combine sugar and cooking oil; beat. 
Add eggs, orange juice, and vanilla.
Sift together flour, baking powder, and salt; add to creamed mixture.
Beat until smooth.
Pour one third batter into greased and floured 12 cup bundt pan
alternating with one half apple mixture.  Repeat. 
End with layer of batter on top.
Bake at 325 degrees F for 60 minutes or until cake tests done.
Cool in pan 10 to 15 minutes; turn out on wire rack or serving plate to
complete cooling.  Sprinkle with confectioners sugar.

Apple Walnut Cake with Lemon Butter Frosting

   4      cups          apples -- peeled, chopped
   2      cups          sugar
   2                    eggs -- slightly beaten
     1/2  cup           oil
   1      teaspoon      vanilla

   2      teaspoons     cinnamon
   1      teaspoon      salt
   1      cup           walnuts -- chopped
                        ***LEMON BUTTER FROSTING***
   4      tablespoons   butter
   3      cups          confectioner's sugar
   2      tablespoons   lemon juice
   2      tablespoons   water

In bowl stir together apples and sugar; let stand 5 minutes.
Stir together eggs, oil and vanilla.  Sift flour, baking soda, cinnamon and salt.
Blend in egg mixture.  Fold in apples and walnuts, mixing well.
Pour batter into greased and floured 13 x 9 baking pan.
Bake at 350 for 60 minutes or until done.
Cool and frost with Lemon Butter Frosting.
Frosting:  In bowl combine butter, sugar,
lemon juice and enough water for spreading consistency;
beat well.

     3/4  cup           Margarine (1 1/2 sticks)
   2      cups          Sugar
   2      large         Eggs
   2      teaspoons     Soda

   4      cups          Apples -- finely chopped
   1      cup           Nuts -- chopped (optional)

Cream margarine and sugar together until fluffy. Add eggs. Beat well.
Sift dry ingredients.  Addto sugar mixture. Mix well Add apples and nuts.
Mix well until apples are disstributed and coated in batter.
Pour into a well greased and floured 13x9" pan.
Bake at 350 degrees for 45 minutes to 1 hour.
Serve with whipped cream or ice cream.

   3      tablespoons   Baking powder
   1      cup           Oil

   6                    Apples; pared -- thinly
                        sliced -- dropped into
                        lemon water and drained -- well
   1      cup           Sugar
   1      tablespoon    Cinnamon

Mix together well the sugar and cinnamon.
Sift other dry ingredients together and put in a large bowl; add eggs, oil,
vanilla and orange juice, mixing well; pour 1/4 of batter into a greased
and floured tube pan; top with 1/4 of apples; sprinkle with 1/4 of sugar/cinnamon;
continue layering, ending with sugar/cinnamon;
bake in a preheated 350~ oven for 1 1/4 to 1 1/2 hours; cool on a wire rack.

Note.  May be eaten plain or frosted with a simple lemon, cinnamon or nutmeg flavored frosting

     1/2  teaspoon      baking soda
   1      teaspoon      cream of tartar
     1/4  teaspoon      salt
   1      cup           butter
     3/4  cup           sugar
   1      teaspoon      vanilla
   2      large         eggs
                        CREAM CHEESE FILLING:
  16      ounces        cream cheese
   2      teaspoons     vanilla
     1/3  cup           sugar
   2      tablespoons   heavy cream
                        CUSTARD TOPPING:
   1      cup           heavy cream (less 2 TB)
   2                    eggs
     1/2  cup           sugar
   1      tablespoon    lemon juice
     1/2  teaspoon      cinnamon
     1/8  teaspoon      nutmeg
                        APPLE TOPPING:
   3      pounds        apples (9 medium)
     1/2  cup           pecans -- finely chop

  CAKE: Preheat oven to 350.  Tightly wrap the outside of a 9"
springform pan with foil so it covers the bottom and sides of the pan.
Butter the inside of the pan.    On waxed paper, stir together the flour,
soda, cream of tartar and salt. In large bowl cream butter, sugar and vanilla.
Beat in eggs, then flour mixture until blended. With wide spatula,
spread batter over bottom and sides of pan. Refrigerate.
Without washing beater, make cream cheese filling and custard topping.

CREAM CHEESE FILLING: Beat all ingredients together.

CUSTARD TOPPING: Beat all ingredients together.

APPLE TOPPING: Pare and core the apples. Cut into 1/8 to 1/4" slices.
Remove pan from refrigerator; spread cream cheese filling over bottom.
Arrange apples over filling; pour custard topping over apples. Sprinkle with pecans.   
Bake on rack below center of oven for 1 hr.
Cover top with foil and continue baking 50-60 min. more until custard is set.
Place on rack to cool. Remove foil; loosen sides; remove band.

                             Dried Apple Cake

     2/3  C             Butter

   1      C             Molasses

   1      tsp           Soda, Level
                        Nutmeg -- to taste
                        Cinnamon -- to taste

Soak apples in water long enough to make soft. Then chop them to about the
size of raisins and boil them for 15 mins in the molasses. Dissolve the
soda in a little hot water, and put this in the molasses when cold. Then
mix in all other ingredients, beat well, and pour into cake pan. Bake in
moderate oven till done.

     3/4  Cup           all purpose flour
     1/2  Cup           whole wheat flour
   1      Tsp.          soda
   2      Tsp.          cinnamon
     1/2  Tsp           salt
   1      Cup           granulated sugar
   1      Tsp.          vanilla
     1/2  Cup           oil
   1                    egg
     1/4  Cup           golden raisins
     1/4  Cup           chopped walnuts

                                                           
  Mix sugar with apples, let stand until sugar is dissolved
, add egg & mix well. Sift dry ingredients together & add  
apple mixture & mix well. Stir in nuts & raisins. Pour into
8x8x2 pan, bake at 350 for 30-35 min. Do not over bake.    
   Sauce:  l/4 cup each brown & gran sugar, 1/4 c. marg. or
butter, 1/4 c. evaporated milk, 1 tbls. flour, 1 tsp.      
vanilla. Put all ingredients in saucepan( mix the flour    
with the milk), and cook about 1-2 min. after butter melts.
Poke holes in cake with fork, & pour on cake while both   
are still very warm. This may easily be doubled to a 9x13  
cake.

    Fresh Apple Nut Cake with Caramel Icing

   1      teaspoon      Vanilla
   2                    Eggs
   2      cups          Sugar
   1      cup           Pecans -- finely chopped
                        Caramel Icing:
   2 1/2  cups          Sugar
     3/4  cup           Milk
   1                    Egg
     1/2  cup           Sugar
     1/2                Stick butter
   1      teaspoon      Vanilla

Preheat oven to 350 degrees.  In a lg mixing bowl, sift flour, baking powder,
soda, salt, & cinnamon. Add oil, apples & vanilla. Beat at md speed for 2 min.
until well blended. In another bowl, beat eggs until light yellow in color. 
Gradually add sugar & continue beating until light & fluffy.
Fold egg mixture into the apple mixture, blending thoroughly.
Stir in nuts.  Pour into lightly greased 10" tube pan.
Bake at 350 degrees for 1 hr. & 10 min. or until done.

Caramel Icing:

MIx 2 c sugar, milk & egg & bring to a boil.
Brown 1/2 c sugar in skillet, then add it to egg mixture while boiling.
Boil until cool, then add a little butter & vanilla. Cool & spread over cake.

   1 1/4  teaspoons     Cinnamon -- ground
     1/4  teaspoon      Mace -- ground
   1      teaspoon      Baking soda
     3/4  teaspoon      Salt
   1      cup           Whole wheat flour -- sifted
   1 1/4  cups          Walnuts -- coarsely chopped
   3 1/4  cups          Apples; coarse chunks -- peel
                        and cored
   3      teaspoons     Calvados (apple brandy) or b -- andy
                        Apple cider glaze (instructi -- ns follow)

Preheat oven to 325 degrees. In a large bowl, beat vegetable oil and sugar
until thick and opaque. Add eggs one at a time, beating well after each addition.
Sift together all-purpose flour, cloves, cinnamon, mace, baking soda and salt,
then stir in whole wheat flour. Add to oil mixture and blend.
Stir in walnuts, apple chunks and apple brandy.
Stir to distribute pieces evenly. Pour into a greased 10" round cake pan.
Bake 1 hour and 15 minutes or until a cake tester inserted in center comes out clean.
Let cake rest for 10 minutes, then unmold and pour glaze over
warm cake or cut cake and pour glaze over slices.

Recipe by: Sue Klapper Preparation Time: 0:25 Heat oven to 350.
Cream shortening and sugar.  Add eggs, salt, flour, spices and soda.
Fold in apples and nuts. Pour into greased 9 x 13 pan and bake for 25 minutes.
While this is baking, mix together topping ingredients.
Spread over hot cake at once.
Return to oven and bake 15 minutes more.

  Amount  Measure       Ingredient -- Preparation Method

   2      cups          sugar
   2      cups          flour
   4                    eggs
   3      teaspoons     baking powder
     1/2  cup           oil
   3      teaspoons     vanilla
     1/3  cup           orange juice
     1/4  teaspoon      salt
                        APPLE MIXTURE:
   4      large         apples, peeled -- cored and sliced
   4      teaspoons     sugar
   1      teaspoon      cinnamon

Beat everything but Apple Mixture with mixer for 10 minutes.
Grease 2 loaf pans or 1 tube pan and make several layers of batter and apples,
beginning with batter and ending with apples.
Bake at 350^ for 1 hour or until tester is dry when inserted in center.
A tube pan will take 10-15 minutes longer.
(If glass pans are used, turn oven to 325^ after first 10 minutes
