Potato Bacon Casserole 

Tender hash browns and succulent bacon pieces are at the
heart of this hearty potato dish. A crowd-pleaser at brunch
or any meal.

4 cups frozen shredded hash brown potatoes
1/2 cup finely chopped onion
8 oz. bacon or turkey bacon, cooked and crumbled
1 cup (4 oz.) shredded cheddar cheese
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
or NESTLÉ® CARNATION® Evaporated Lowfat Milk
1 large egg, lightly beaten, or 1/4 cup egg substitute
1 1/2 teaspoons seasoned salt

PREHEAT oven to 350° F. Grease 8-inch-square baking dish.

LAYER 1/2 potatoes, 1/2 onion, 1/2 bacon and 1/2 cheese in
prepared baking dish; repeat layers. Combine evaporated milk,
egg and seasoned salt in small bowl. Pour evenly over potato
mixture; cover.

BAKE for 55 to 60 minutes. Uncover; bake for an additional 5
minutes. Let stand for 10 to 15 minutes before serving.

Makes 6 servings

Scalloped Potatoes Gratin
 
1 1/2 cups heavy cream
1 sprig fresh thyme
2 garlic cloves, chopped
1/2 teaspoon ground nutmeg
Butter
2 russet potatoes, peeled and cut into 1/8-inch thick slices
Salt and freshly ground black pepper
1/2 cup grated Parmesan, plus more for broiling

Preheat the oven to 375 degrees F.

In a saucepan, heat up the cream with a sprig of thyme, chopped garlic and nutmeg.

While cream is heating up, butter a casserole dish. Place a layer of potato in an overlapping pattern and season with salt and pepper. Remove cream from heat, then pour a little over the potatoes. Top with some grated Parmesan. Make 2 more layers. Bake, uncovered, for 45 minutes. Sprinkle some more Parmesan and broil until cheese browns, about 5 minutes
