Cheesy Potato Soup
2 strips bacon
3/4 to 1 stick butter
1 onion, chopped
1/4 to 1/2 c. flour
2 cans chicken broth
1 pt. half & half
1 lb Velveeta Cheese
8 - 10 Baked Potatoes, peeled and chopped
Cook, drain, and crumble bacon.
Melt butter in bacon drippings and add onions.
Saute' until tender.
Stir in flour until blended.
Add broth and cook until thickened.
Add half & half, cheese, potatoes, and bacon.
Heat thoroughly and serve.
