I get these cowboy cookies where I go have coffee, and I looked on the internet for the recipe, none were quite like what I get there, so this is what I came up with and it's pretty darn close.

2 cups of flour
2 cups of oatmeal
1 teaspoon of baking soda
1/2 teaspoon of baking powder
1/2 teaspoon of salt
3 tablespoons of cocoa
1 teaspoon cinnamon
Mix in a bowl and set aside

Cream in a big bowl:
1 cup of room temp butter
3/4 cup of sugar
3/4 cup of brown sugar
2 large eggs
1 teas vanilla extract
You all know how that is done, cream the butter, add the sugars, add the eggs, then the extract.

Then add the dry ingredients, mixing just til mixed.  Add:

1 1/2 cups chocolate chips
1 cup of toasted nuts, walnuts preferred but whatever you want.

Blend.

I experimented with really big cookies, like 1/4 cup of dough.. too big.  Drop by teaspoons on a cookie sheet and bake for 10 mins.  at 350 degrees.  I think I have it, if you bake them, tell me how you like them.

Shari
