Taquito-Enchilada Bake
1 (20oz) can red enchilada sauce
1 (20oz) box Jose Ole Taquitos (shredded beef) partially thawed
or 1 (22.5oz chicken & cheese taquitos)
1 1/2 c shredded 3 cheese Mexican blend
1 (16oz) can refried beans, heated
1/3 c sliced green onions (recipe calls for 1/3 c diced red onions in addition)
1 (2.25oz) can sliced black olives, drained
Preheat oven to 375°. Pour 1/3 of the enchilada sauce into a lightly greased 11x7x2 inch baking dish.
Layer: 1/3 sauce
1/2 taquitos
1/2 beans
1/3 sauce
1/2 onions
1/2 cheese
Top: with remaining taquitos and enchilda sauce. Bake covered for 25 minutes. The last few minutes, top with remaining cheese.
Garnish with onions and olives. Serve with sour cream if desired.
(I made this for a family reunion and they loved it. I'll be doubling the recipe the next time I make it!
