Baked Apricot Casserole     


This dish is delicious served with pork, chicken or duck.

Ingredients:
(4) 6 ounce packages of dried apricots or (4) 15 ounce cans
1 1/2 cups light brown sugar
1 box of Ritz crackers, broken into pieces
2 sticks butter

Method:
Start by soaking the 4 packages of dried apricots in boiling water - it will take only about 15 minutes for them to re-hydrate. Or, open the 4 cans of apricots.

With the apricots ready, simply line 1/2 of them in the bottom of a 2 quart buttered casserole dish. Then layer the remaining 3 ingredients on top.

Over the apricots, layer half of the light brown sugar (3/4 cup) followed by 1/2 box of Ritz crackers, broken into small pieces. Then cut up 1 stick of butter into small pieces and distribute the pieces evenly over the crackers. Repeat with another layer of apricots, brown sugar, Ritz crackers and butter. Bake for (1) hour in a preheated 300-degree oven.

Amaretto Maple Apple Delight Casserole

3 apples chopped (3 to 4)

1 onion chopped

1 1/2 sticks margarine (3/4 cup)

3 jiggers amaretto

2 lb. little link pork sausage (2 to 3) browned and cut into bite-size pieces

1/2 C. maple syrup

1 can apricot nectar (5.5 oz.)

Ground cinnamon to taste

Saute apples and onion in margarine. Add amaretto. Stir in sausage.

Add maple syrup, apricot nectar, and cinnamon. Heat through and put into chafing dish.

Makes 10 to 12 servings.

NOTE: May be made ahead and warmed before serving. Serve this as an accompaniment to pancakes.

Pineapple Bread Casserole
Mix
3/4 cup sugar
1/2 cup butter
Add 4 eggs (not beaten)
Add 1 tsp. vanilla
1 can drained pineapple crushed
5 to seven slices cubed white bread

Mix all and place in a buttered casserole dish. Bake about 35 Min. 350
degrees.

Pineapple Casserole



1 cup sugar

6 TB all-purpose flour

2 cups grated sharp cheddar

2 cans (20 oz. ea.) pineapple chunks, drained, and 6 TB pineapple juice

reserved

1 cup Ritz cracker crumbs

1 stick (1/4 lb. or 8 TB) butter, melted, plus extra for greasing pan



Preheat the oven to 350º F.



Grease a medium-size casserole dish with butter.



In a large bowl, stir together the sugar and flour. Gradually stir in the

cheese.



Add the drained pineapple chunks, and stir until ingredients are well

combined. Pour

the mixture into the prepared casserole dish.



In another medium bowl, combine the cracker crumbs, melted butter, and

reserved pineapple

juice, stirring with a rubber spatula until evenly blended. Spread crumb

mixture on top of

pineapple mixture.



Bake uncovered, for 25 to 30 minutes, or until golden brown.



Yield: 8 servings.

FRUIT NUT DRESSING CASSEROLE

1 six ounce bag Mrs Cubbison's Seasoned Dressing
1/2 cup chopped Sunsweet Dried Plums
1/2 cup chopped Blue Diamond Almonds
1/2 cup chopped celery
1/2 cup chopped apple
1/2 cup Sunsweet Cranberries
1/2 cup chopped onion
1/2 cup (1 stick) melted Challenge unsalted butter
1/2 cup chardonnay or apple juice

Combine all the ingredients with the melted butter then stir wine in gradually. Spoon into 2 1/2 or 3-quart greased casserole dish. Bake covered 30 minutes at 350 degrees F. Remove cover and bake 5 to 10 minutes longer for a crisper top. Makes 12 (1/2 cup) servings.

Broiled Citrus Salad Casserole

Recipe courtesy Rachael Ray.



2 quarts jarred mixed citrus salad, drained

3 oz Cointreau or other orange liqueur

1/3 cup brown sugar

Several sprigs fresh mint, for garnish



Arrange drained citrus in a casserole dish. Drizzle fruit with liqueur. Top

fruit with the

brown sugar, sprinkled evenly over the top.



Place casserole under a hot broiler 6 inches from heat source for 7 or 8

minutes until sugar

just begins to brown and bubble.



Garnish warm casserole with torn or chopped fresh mint leaves

and serve.



Yield: 6 servings.

1 cup shredded sharp cheddar cheese

Mix flour, sugar and salt in small bowl. Cut in butter until crumbly. Toss apples with water and lemon juice in bowl. Spoon into greased 8 inch baking dish. Sprinkle with flour mixture. Bake at 350F for 35 minutes. Sprinkle with cheese. Bake for 5 minutes longer. 8 servings.

Scalloped Apples

1 20 ounce can apple slices
1 21 ounce can apple pie filling
3/4 cup canned whole berry cranberry sauce
1/4 cup chopped walnuts
1/2 cup firmly packed brown sugar
1 teaspoon cinnamon

Combine all ingredients. Place in 1 1/2 quart casserole dish or 9 x 9 x 2 inch pan. Cover with foil. Bake at 350F about 30 minutes or until thoroughly heated and bubbly around edges. Serve hot with poultry, meat or fish. 10 servings, 1/2 cup each.

Apricot Casserole

2 lg. cans apricots
1 c. brown sugar
1 stick butter
2 pkgs. soda crackers
1 c. pecans

Remove seeds and drain. Butter baking dish and layer apricots; sprinkle broken up crackers, pecans (sugar and butter) over apricots. Bake at 325 degrees for 1 1/2 to 2 hours. Great with ham or pork.
