Microwave Basic Bread Stuffing - Denise

1/4 cup butter or margarine
1/2 cup chopped onion
1 cup chopped celery
4 cups dry bread cubes
1 tablespoon dried parsley
1/2 teaspoon crumbled dried sage
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 cup chicken broth or water
1 egg lightly beaten optional

In a 3 quart casserole combine the butter, onion and celery. Cover tightly
and cook on high for 3 to 5 minutes or till the vegetables are tender.
Stir in the bread cubes and seasonings. Stir well. Heat the broth or water
for 2 to 3 minutes or until boiling. Pour in to the stuffing mixture and
stir well to moisten. Add the egg and mix well. Spoon in to a 1 1/2 quart
casserole. Cover with wax paper and cook on high for 5 to 10 minutes or
until heated threw. Let stand covered for 5 minutes.

Makes enough for 6 to 8 pounds poultry

Dumplings (microwave)----Jolene

1½ cups unsifted, all purpose flour
2 teaspoons baking powder 
1/2 teaspoon salt
1 teaspoon parsley flakes
2/3 cup milk
1 egg, slightly beaten
2 tablespoons oil

Combine the first four ingredients. Combine the next three ingredients. Mix just until moistened. Place in chicken stew. Cook 6 minutes on High, covered, or until no longer doughy.

Microwave Chicken and Dressing

Sunday "roast chicken" in minutes! Another one of my favorites. I like to use boneless skinless chicken breasts - they will only need 12 to 15 minutes cooking time.
 
Ingredients:

1 package herb stuffing mix
2 - 3 pounds chicken pieces
1 can (10 oz.) cream of celery soup
Freshly ground pepper

 

Directions:

Prepare stuffing mix according to the package directions. Spread in the bottom of a baking dish.

Top with chicken pieces. Spread soup over top, and grind pepper over.

Cover with waxed paper and cook in the microwave, on high, for 20 to 25 minutes. Let stand 5 minutes. Makes 4 to 6 servings.

Nova Scotia Dressing

6 c Potato, cubed
1 1/2 c Bread crumbs
1/2 ts Pepper
1/2 ts Salt
2 ts Poultry seasoning (to Taste) OR
1 ts Sage
1/2 c Melted margarine
1/2 c Onion, chopped (to taste)

Cook potatoes about 20 min or until soft enough to mash. Combine all ingredients in large bowl and blend well. TASTE. Divide into meal-sized portions (extra may be frozen). Re-heat in microwave or oven a few minutes before serving.
