Fried rice special
2 cups brown rice, cooked, drained
1 small onion, chopped
1 medium sized carrot, grated
4 medium sized mushrooms, sliced
1/2 cup peas, cooked
1/2 cup corn kernels, raw
1 cup mung bean sprouts (2 days' growth only)
1/2 cup unsweetened apple juice
2 tablespoons soy sauce, low salt
1 tablespoon chives, chopped
Sauté the onion in a non-stick pan (lid on) in a little apple juice until soft. Add the
remaining ingredients and gently fold until hot and thoroughly mixed, for about 4
to 5 minutes.
Serves 4

LOW CHOLESTEROL MOLASSES CRINKLES | | 1 1/2 c. butter 2 c. brown sugar 1/2 c. Egg Beaters 1/2 c. molasses 4 1/2 c. flour 1/2 tsp. salt 4 tsp. baking soda 1 tsp. cloves, ground 2 tsp. cinnamon 2 tsp. ginger, ground Sugar, granulated, as needed 1. Cream sugar and butter. Add Egg Beaters. Add molasses and beat well. 2. Sift flour, salt and soda. Add spices and mix into batter. 3. Chill dough. 4. Heat oven to 350 degrees. Scoop by teaspoon. Roll into small ball. Flatten with glass dipped in granulated sugar. 5. Bake about 10 to 12 minutes. 1 cookie = 133 calories, 0 cholesterol. | | |
