BANANA BREAD

Weight Watchers



This loaf is the perfect size for two people to enjoy a couple of slices soon after it comes out of the oven, and then again later.



½ cup flour

3 T sugar

¼ t baking powder

¼ t baking soda

Dash of salt

¼ cups 30% less fat sour cream

¼ cup mash ripe banana

1 t vegetable oil

¼ t vanilla extract

1 large egg white, lightly beaten

Cooking Spray



Preheat oven to 350º

Combine first 5 ingredients in a medium bowl; make a well in center of mixture.

Combine sour cream and next 4 ingredients; stir well.

Add to flour mixture, stirring just until moist.

Spoon batter into a 6"x3"x2" loaf pan coated with cooking spray.

Bake at 350º for 35 minutes or until a wooden pick inserted in center comes out clean.

Let cool in pan 10 minutes; remove from pan, and let cool on a wire rack.



Yield 1 loaf, 6 servings (serving size 1 slice)

Harvest Pumpkin-Pineapple Loaf

Ingredients:
No-stick cooking spray
2 1/2 cups granulated sugar
1/2 cup (1 stick) butter or margarine, softened
1 can (15 ounces) pumpkin
1 can (8 1/4 ounces) crushed pineapple in juice, undrained
4 large eggs
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 teaspoon salt
Powdered sugar (optional)

Preparation:
Heat oven to 350° F. Lightly spray two 8 1/2 x 4 1/2-inch loaf pans with cooking
spray. In mixer bowl, beat together sugar and butter until blended. Add pumpkin,
pineapple and eggs; beat well. Set aside. In medium bowl, combine flour, baking
soda, pumpkin pie spice and salt; add to pumpkin mixture, mixing until dry
ingredients are just moistened. Divide batter into prepared pans; spread evenly.
Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean.
Cool 5 minutes. Remove from pans to wire racks; cool completely. Lightly
sprinkle powdered sugar over tops, if desired.

Servings: 16
Nutritional Information Per Serving: 312 calories; 8 g fat; 69 mg cholesterol;
360 mg sodium; 57 g carbohydrate; 2 g fiber; 5 g protein.

Sweet Pear Bread

1 serving cooking spray
3/4 cup all purpose flour
1 cup whole grain wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. table salt
1 large egg, beaten
1/4 cup canola oil
7 TB dark brown sugar
1 can (15 oz.) unsweetened canned pears, drained and sliced (packed in water)

1/2 cup RC Diet Cola, or other brand

Preheat oven to 350° F. Coat a 9" square pan with cooking spray.

Combine flours, baking powder, baking soda, cinnamon, nutmeg and salt in a
medium bowl. Combine egg, oil and brown sugar in a large bowl. Finely chop pears
and add to egg mixture. Stir in soda.

Stir flour mixture into egg mixture just enough to wet batter; do not beat.

Spread batter into prepared pan and bake for 25 minutes, or until a toothpick
inserted near the center comes out clean. Slice into 16 pieces and serve
warm.

Cranberry Bread recipe

Nonstick cooking spray
1 cup all-purpose flour
1/2 cup whole-wheat flour
1 cup granulated sugar
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
3 egg whites
1/3 cup applesauce
3 tablespoons buttermilk
1 1/2 cups fresh cranberries
1/2 cup chopped walnuts

Heat oven to 350 degrees F. Lightly coat a loaf pan with nonstick cooking spray.

In a medium-size bowl, combine flours, sugar, cinnamon, salt and baking soda.

In a larger bowl, beat the egg whites at high speed for 1 minute. Beat in applesauce and buttermilk. Gradually add the flour mixture and beat until combined. Stir in cranberries and walnuts. Transfer to prepared loaf pan.

Bake for 45 minutes or until the edges begin to pull away from the sides of the pan and a wooden pick inserted in the center comes out clean.

Slice and serve.

Makes 12 slices.

Nutritional information per slice: 166 calories, 3.2 g fat, 1.8 g fiber

Old Fashioned Molasses Raisin Bread

1 tsp. yeast, dry
1 tsp. sugar
1/2 cup water, lukewarm
3/4 cup low-fat milk, (1%)
1/4 cup molasses
1 TB butter, melted
1 tsp. ground cinnamon
1/2 tsp. table salt, (2 ml)
1 tsp. ground nutmeg
1 tsp. ground cloves
3 cup all purpose flour, plus extra for flouring work surface
1 cup raisins
1 sprays cooking spray

In a bowl, dissolve yeast and sugar in lukewarm water. Let stand 10 minutes,
until yeast is bubbly.

Stir in milk, molasses, butter, cinnamon, salt, nutmeg, and cloves. Stir in 3
cups of flour and mix
and stir until blended. Knead in raisins.

Transfer dough to a flat surface and knead for 10 minutes, until dough is
smooth.

Coat a large bowl with cooking spray. Place dough in bowl and turn to coat.
Place bowl in a warm
place, cover with a kitchen towel and let rise 2 hours. Punch dough down with
your fist.

Coat a 9-inch loaf pan with cooking spray. Press dough into prepared pan,
cover with kitchen towel and
let rise again until doubled in bulk, about 1 to 2 hours.

Preheat oven to 375° F. Bake loaf 40 minutes, until browned and
hollow-sounding when tapped.

Cool 10 minutes in pan. Transfer to a wire rack to cool completely.

Chips Ajoy Loaf Bread - Lindah  

3 Points Per Serving

 

2 1/4 cups Bisquick reduced fat baking mix

1 package JELL-O sugar-free inst choc. pudding mix -- (4 serving size)

2/3 cup Carnation nonfat dry milk powder

1/4 cup pourable Sugar Twin

2 Tablespoons (1/2 oz) mini chocolate chips

1/4 cup (1 oz) chopped walnuts

2 eggs -- slightly beaten or equivalent in egg substitute

3/4 cup Yoplait plain fat-free yogurt -- * see note

1/2 cup water

2 teaspoons vegetable oil

 

1 teaspoon vanilla extract -- * see note

"I had fun naming this scrumptious bread, thinking of how sailors shout with joy when they spot land. Your family won't need to hit the water to feel the excitement. Instead they might just spot this chocolatey bread cooling on the counter and shout, "Chips Ajoy"!"

1. Preheat oven to 375º F. Spray a 9-by-5-inch loaf pan with butter-flavored cooking spray. In a large bowl, combine baking mix, dry pudding mix, dry milk powder, Sugar Twin, chocolate chips and walnuts. In a small bowl, combine eggs, yogurt, water, oil, and vanilla extract. Add the liquid mixture to the dry mixture. Mix gently just to combine. Evenly spread batter into prepared loaf pan. Bake for 45-50 minutes or until a toothpick inserted in center comes out clean. Place loaf pan on a wire rack and let set for 10 minutes. Remove bread from pan and continue cooling on wire rack.

Cut into 12 slices.

Freezes well.

* You might want to try chocolate or almond extract in place of the vanilla extract and use fat-free vanilla flavored yogurt instead of the plain.

Banana Bread - Lindah

Recipe by Heart Healthy web site

3 Points Per Serving

 

This is pure and simple banana bread, heavy, moist and dark.

3 ripe bananas, well mashed

1/3 cup sugar

1/2 cup egg substitute

1 tsp. salt (optional)

2 cups flour

1 tsp. baking soda

 

Preheat oven to 350º. Spray a loaf pan with cooking spray. Mix the bananas and egg substitute together in a large bowl. Stir in the flour, sugar, salt and baking soda; blend. Put the batter in the pan and bake 1 hour or until a toothpick inserted in the center comes out clean. Remove from pan to a wire rack. Serve still warm or cooled

Yield:10 slices

PER SERVING: CALORIES 154 FAT 0.4g SATURATED FAT 0.1g SODIUM 143mg CARBOHYDRATE 34g PROTEIN 4g CHOLESTEROL 0mg FIBER 1.5g

CARROT-RAISIN BREAD   lindah

Yield: One loaf
Serving Size: 1/2-inch slice

Notes: This tasty bread is low in saturated fat and cholesterol,
thanks to the small amount of oil and eggs used.

1-1/2 C sifted all-purpose flour
1/2 C sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1-1/2 tsp ground cinnamon
1/4 tsp ground allspice
1 egg, beaten
1/2 C water
2 Tbsp vegetable oil
1/2 tsp vanilla
1-1/2 C finely shredded carrots
- 1/4 C chopped pecans
- 1/4 C golden raisins

Preheat oven to 350º F. Lightly oil two 9x5-inch loaf pan. Stir together dry ingredients in large mixing bowl. Make a well in center of dry mixture. In separate bowl, mix together remaining ingredients; add this mixture all at once to dry ingredients. Stir just enough to moisten and evenly distribute carrots.

Turn into prepared pan. Bake for 50 minutes or until toothpick inserted in center comes out clean.

Cool 5 minutes in pan. Remove from pan and complete cooling on a wire rack before slicing.

Yield: One loaf--Serving Size: 1/2-inch slice

powder,cinnamon, baking soda, nutmeg, and cloves. In another mixing

Maple-Nut Bread 6 Servings
2 1/2 cup. Flour
1 cup Sugar
3 teaspoon Baking powder
1/2 teaspoon Salt
1 Egg, well beaten
1 cup Milk
3/4 teaspoon Maple syrup
1 cup Chopped nuts
Sift together dry ingredients, add milk, egg, and syrup. Mix only
until
dry ingredients are moistened. Stir in nuts. Pour into well greased

pan. Let stand 20 mins. Bake 1 hr at 350 F. ============ Mini Cinnamon
Rolls
2 Tbsp. packed dark brown sugar (I might try the BS sub) 1 tsp.
cinnamon
1 tsp. butter, melted
1 (11 oz) tube refrigerated breadsticks
1/4 cup powdered sugar
1-1/2 tsp. reduced fat cream cheese
1/4 tsp. vanilla
Preheat the oven to 375. Spray a 9 x 13 baking pan with non stick
spray.
Combine the brown sugar, cinnamon and butter in a small bowl; set
aside.
Separate the breadsticks into 12 strips. Sprinkle the tops with the
brown sugar mixture and roll each one into a spiral, pressing to seal
the ends. Arrange in the baking pan about 1 inch apart and bake until
lightly golden, 15-18 mins. Cool on a rack about 10 mins. To prepare
the
frosting, combine the powdered sugar, cream cheese and vanilla in a
small bowl, adding a few drops of water if needed to make a smooth,
spreadable glaze. Drizzle over the tops of the warm rolls and let
stand
a few mins to set. Serve warm. Per serving: (1 roll) 94 cals, 1 g
fat, 1
g fiber.

This is so good and so easy.

I added 1/4 cup of chopped walnuts to make 3 points per slice
