What do I bid ? If I bid 2C, won't my partner think I'm using Stayman and have a 4 card major?

and I bid 2D, won't my partner think I have 5 Hearts ?

Right. You can't bid 2C with the first hand or 2D with the second. But here you don't need to. Just bid 3N with either of these hands.
 
If your hand was stronger and you want to play in slam in a minor if partner has support, you have a more difficult problem.
 
Say you held:
 
S x H Axx D AJxxxx C Axx
 
Now you want to play 6D if partner has support for diamonds and 3N if not. Unfortunately, SAYC - Basic has no method of showing a single minor with slam interest after the 1N opening.  The best you can do is bid 2C followed by 3D. This sequence is game forcing showing a 4 card major and 5 or more card diamond suit. If partner obliges by bidding 4D, you can 6D.

Partner has support. So we have (at least) an 8 card fit in Diamonds.



If, as you said " NOW YOU WANT TO PLAY 6 D IF P HAS SUPPORT-- 3NT IF NOT", the simple answer (and the logical ONLY answer) is just go to 6 diamonds, and enjoy it. (if you play transfers to minors, first transfer to diamonds, then go to 6 D.



My main point is that even VERY GOOD PLAYERS keep forgetting that a 6 card suit in front of a 1nt opener by partner IS ALREADY A FIT.

On the hand with D-AJxxxx, if partner has D-xx, we certainly don't want to be in 6D. We only want to be in 6D if partner has good 3 card or 4 card support for diamonds.
 
It would also be nice if we could avoid 6D if partner has excess wasted strength in spades but that is not possible to determine either.
