2 large oranges 3 large lemons 2 small grapefruit 12 cups sugar (6 lbs.) water - Wash fruit well
- Place fruit in large pot (dutch oven, soup pot...)
- Add 10 cups of water
- Bring to boil, than reduce heat to simmer
- Allow to simmer for about 2 hours, until fruit is tender and water has reduced to about half
- Remove fruit from pot, let cool
- Slice fruit into quarters
- Remove seeds.
- Scrape out pulp into the remaining water in pot
- Cut rinds into slivers, and place back in pot
- Add sugar
- Set heat on Medium and stir until sugar is dissolved.
- Bring to boil and cook until done
- To test for doneness place a teaspoon of marmalade onto a plate, let cool slightly. If a thin skin forms it's done.
- Remove pot from heat, allow to stand for 1 hour
- Pour into sterilized jars and seal.
Great served over sponge cake, ice cream, as well as toast!
