Gluten Free Pumpkin Cookies - from Santa Claus


Ingredients

GLUTEN-FREE PUMPKIN COOKIES

Prep Time: 15 minutes. Cook Time: 12 minutes. Serves 24



1 tsp baking soda
1 tsp gluten-free baking powder
1 tsp cinnamon
1 cup rice flour
3/4 cup potato starch flour
1/2 cup shortening
3/4 cup turbinado sugar
1 tsp vanilla
1 cup cooked fresh pumpkin or canned pumpkin
1/2 cup chopped nuts (walnuts, pecans, almonds, etc.)


 

Procedure

  1. Preheat oven to 350f degrees

  2. Sift dry ingredients together

  3. Cream shortening and sugar

  4. Add vanilla and pumpkin

  5. Add dry ingredients, blend until mixture is smooth and then add nuts

  6. Shape cookies into 1-inch balls and place a greased cookie sheet. Press flat with a fork.

  7. Bake for 9 - 12 minutes
