Lemon Cookies

This recipe is very refreshing and since it is made from a cake mix the
cookies are soft and the lemon flavor is just wonderful. They are very quick
and easy to make.

Ingredients:

1 moist lemon cake mix
1/3 c. canola oil
2 eggs
1 T. lemon juice

Directions:

Preheat oven to 375 degrees. Beat all ingredients together in a large bowl
with a mixer on low speed until well blended. Drop 1-inch balls onto a
greased cookie sheet. Bake for 6 to 7 minutes or until just starting to get
light brown on the edges. Cool for 1 minute, then remove from cookie sheet
and either sprinkle with confectioners' sugar or use frosting.

Lemon Frosting...

Ingredients:

1 c. confectioners' sugar
1 T. lemon juice

Directions:

Stir together until well mixed and spread on cookies.

Sinful Cookies
 
 
Preheat oven to 340'f
Line a jellyroll pan with aluminum foil
Lay out soda biscuits/soda crackers/saltines,... side by each to completely cover the foil in pan
Melt 1 cup butter in a 2-cup pitcher
Add 3/4 cup brown sugar to melted butter and stir well
Pour this mixture over the crackers in the pan
Bake for 15 minutes
Remove and let sit for "2 minutes"...THEN....
add a "Generous Amount" of chip-its over top the "baked crackers".....
Sprinkle slice almonds over the "melted" chocolate.
CHILL
Break into pieces and store in covered container on counter.
(The flavour of these cookies can be changed....with the type of  chip-its you use....milk, dark or white chocolate)
