Good Morning!

How is everyone today?

Our walk this morning was wonderful!

No fog, rain, "stinkies".....or anything/one else for that matter.

We didn't cover as much distance as normal today.

I hate to think about this BUT "Momma~dog" is getting up there........she is like many of the rest of us too,....carrying along a few extra kilos, that makes doing "stuff", uncomfortable as well!

'Dini,(Houdini)...was 12 last January 17th. "That day"....is coming......sooner than I care to recognize!

Enough of that talk!!!

Soooooooo?...what are your plans for today?

I have 2 places....both on the same street...First place tho....is "laundry day",(bed changing & spin the mattress)....lol

Second place......I just "make lines on the carpet"!....lol

I really don't know why they keep me on....

Do you know how hard it is to "look busy" for 4 hours and do nothing??????

Money is great tho...but in all honesty....I feel guilty taking it.

Tomorrow, I understand "The Compressor" is coming for that refrigerator that crapped out, 2 weeks ago, remember?

Just heard them saying that in "Cottage Country",(about 1-2 hours north of Toronto),...the temperature went as high as 30'c/86'F.

That apparently is very rare, for the temp to go that high, at this time of the year.

Think we have around 60-some hours until Fall arrives in our area.

Wonder what "She" will be wearing this year?....lol

Celeb Birthdays today....

A Lady that won on the show $64,000-Question...

Dr. Joyce Brothers is 79

Sofia Loren is 73

Ann "Mirra" is 78!(have no idea who she is)

...and on this date in 1977...The song "Sugar/Sugar" was a hit.

On a sad note...It was on this date in 1973 that Jim Croce and 3 of his Buddies were killed in a plane crash!

Well I have run outta  stuff to talk about.....again!

Hard to believe, huh?

Green Tomato Cake

Ingredient

 

Imperial

1 L green tomatoes, chopped 4 cup
15 ml salt 1 tbsp
125 ml butter or margarine 1/2 cup
500 ml white sugar 2 cup
2 eggs 2
500 ml flour 2 cup
5 ml ground cinnamon 1 tsp
5 ml ground nutmeg 1 tsp
5 ml baking soda 1 tsp
1 ml salt 1/4 tsp
125 ml raisins 1/2 cup
125 ml walnuts, chopped 1/2 cup
In a large bowl; place tomatoes and sprinkle with 1 tablespoon (15 ml) salt. Let stand 10 minutes. Place in colander, rinse with cold water and drain.

In a medium bowl; cream butter and sugar. Add eggs and beat until creamy.

In a large bowl; add flour, cinnamon, nutmeg, soda, and 1/4 teaspoon (1 ml) salt. Add raisins and nuts to dry mixture.

Add dry ingredients to creamed mixture. Dough will be very stiff. Mix well. Add drained tomatoes and mix well. Pour into lightly greased 9 x 13 inch (23 x 33 cm) pan. Bake in preheated 350 F (180 C) oven for 40 to 45 minutes or until toothpick inserted into cake comes out clean.

Serves 12

How is everyone today?

We sure had a light-show here in Toronto last night........it started around 10 in my area......never heard any thunder BUT the lightening was spectacular!

Everything looks all washed up & shining clean this morning.

"The Walk" was a good one today....just right temp too & the "right coat" as well! Maybe I finally have learned how to dress myself!...lol

We saw one paper guy....(the pleasant one...lol)

Well here we are at Friday.

For some it means the last work day for 2 days,....for the rest of us......it is "just another day".........hehehe(not complaining at all)

Actually for me...it means that tomorrow is "paint day"! Hope to get that furniture finished tomorrow....IF not tomorrow....then Sunday for sure!

How about you?...anything special planned?

I may not be painting either...just heard them saying that the temps are supposed to be in the 31'c area....and with the humidex...that will feel close to 40'c!

I may just melt away!

temps over 50'-55 degrees farenheit!!!!!!!

Not a lot I can do about it tho, is there?

Yesterday went really well.....finished the day at the first call, washing raccoon "poop" off the pool equipment in the cabana.....and then moved on down the road to the second call and picked up 37 pairs of kids and adult shoes, inside the front door....

BEFORE

I could start cleaning!!!!!!

I sorta thought that was obscene...right?

Then I had to pick up the kids toys from 3 levels of that house.

What is it with the "new parents"?

This is the one where the little boy is still pooping his pants & in diapers!

He was 5 last November.

Wouldn't take a "specialist" to determine he "has issues"...right?

Anyway....I just empty the diaper pail......glad I don't live there 7 days per week! 1-day every 14 is sufficient!....thank you very much!

Today.....I start out in Oakville and fionish at 403 & Winston Churchill.

Hopefully,... I will be home around 4:30.

Snickers Cheesecake.......
Graham Cracker Crust:
4 C. graham crackers
1/4 T. cinnamon
1 t. nutmeg
1/2 C. sugar
1/2 C. butter, softened

Caramel sauce:
1 1/4 C. sugar
1/2 C. water
1 1/4 T. salted butter

Cheesecake:
1 3/4 lbs. cream cheese
5 oz. sugar
1/2 t. vanilla extract
1/4 C. flour, sifted
3 egg yolks
3 egg whites, whipped
3 frozen Snickers bars or 9 fun-sized bars (chopped while frozen)

To make crust, mix all dry ingredients, then add softened butter.

Press
mixture into a 9-inch cheesecake pan.

Make sauce by cooking on medium
heat sugar and water until caramelized.

Add butter.

Spread mixture on
bottom of graham-cracker crust while hot.

Make cake by mixing cream cheese until soft.

Add sugar and vanilla.

Stir
in flour.

Add egg yolks.

Mix all until smooth.

Fold in whipped egg
whites and chopped candy.

Add to graham-cracker crust and bake for 2
hours at 290.

Refrigerate overnight or at least 6 hours.

Makes 10 servings.

BARBECUE MEATBALLS......
1 lb. Hamburger
1 sm onion
1/2 c. Bread crumbs
1 egg
2 tbsp. Oil
3/4 tsp. Salt
1/4 tsp. Pepper
3/4 c. Ketchup
2 tbsp. Dijon mustard
2 tbsp. Brown sugar
1 tsp. Worcestershire sauce

Mince onion.

Combine beef, onion, bread crumbs, salt, pepper, egg and a
Little milk.

Make into balls and cook in oil.

Remove meatballs with
slotted
Spoon.

Add ketchup, 1/3 cup water, mustard, brown sugar, and
Worcestershire
Sauce to pan and bring to boil.

Return meatballs to pan and simmer until hot.

Old Fashioned Scalloped Tomatoes......
1 lg. can tomatoes or 2 cans stewed tomatoes
4 slices toast, cut in cubes
1 tsp. grated onion
Salt to taste
Dash of pepper
1/4 c. melted butter

In 1 quart buttered casserole, alternate tomatoes and bread cubes ending
with cubes.

Season with onion, salt and pepper.

Pour melted butter over
all.

Bake at 375 degrees for 20 minutes.
Serves: 6.

Meatloaf with Sweet and Sour Sauce......
1 (8 oz.) can tomato sauce
1/4 c. brown sugar, packed
1/4 c. cider vinegar
1 tsp. prepared mustard
1 egg, slightly beaten
1 onion, minced
2 stalks celery, chopped
1/2 green pepper, chopped
1/4 c. Italian seasoned bread crumbs or crushed crackers
2 lbs. ground sirloin
1/2 tsp. salt
1/4 tsp. black pepper

In a saucepan mix tomato sauce, brown sugar, vinegar and mustard.

Cook
until sugar is dissolved.

Set aside. T

ake onion, celery, green pepper
and 1 tablespoon water; put in bowl.

Put Saran wrap over them and put in
microwave to soften.

Combine egg with vegetables (celery, onion, green
pepper), crackers, salt, black pepper, meat and 1/2 cup tomato sauce
mixture.

Mix thoroughly.

Shape into loaf.

Put into baking dish and pour
remaining tomato sauce mixture over meatloaf.

Bake 350 degrees covered
for 1 hour.

Baste occasionally.

If sauce thickens, add 1/4 cup water to
sauce.

Serve sauce separate.   Serves 6.

Carolina Barbecued Pork.......
2 onions, quartered
2 T. brown sugar
1 T. paprika
2 tsp. salt
1/2 tsp ground black pepper
1 (4 - 6 lb.) boneless pork butt or shoulder roast (I used pork loin)
3/4 C. cider vinegar
4 tsp Worcestershire sauce
1-1/2 tsp. crushed red pepper flakes
1-1/2 tsp. sugar
1/2 tsp dry mustard
1/2 tsp garlic salt
1/4 tsp cayenne
Hamburger buns
Coleslaw - optional

Place onions in crockpot.

Combine brown sugar, paprika, salt and pepper;
rub over roast.

Place roast over onions.

Combine vinegar, Worcestershire
sauce, red pepper flakes, sugar, mustard, garlic salt and cayenne; stir
to mix well.

Drizzle about one third vinegar mixture over roast;

Cover
and refrigerate remaining vinegar mixture.

Cover crockpot and cook on
low 10 to 12 hours.

About 1 hour before it is done, add about 1/2 the
reserved vinegar mixture to the crockpot.

Serve the remaining sauce at
the table with the meat. ( My roast was juicy enough so I just added all
the vinegar mixture to the crockpot.)

LEMON ICEBOX PIE......
1 c. graham cracker crumbs
1/2 tbsp. brown sugar
1 oz. melted butter or margarine
Dash of cinnamon
4 egg yolks
2 cans sweetened condensed milk
7 oz. lemon juice

Mix together:

Press into 9 inch pie pan, chill.

Mix together:

Pour into
crust, chill thoroughly.

Donut Muffins........
1-1/3 cup flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 1/4 teaspoon cinnamon, divided
1 egg
1/3 cup oil
1 1/2 cups sugar, divided
3/4 cup milk
1/2 cup butter, melted

Combine flour, baking powder, salt, nutmeg, and 1/4 teaspoon cinnamon.
Add the egg, oil, 3/4 cup sugar and milk.

Stir all ingredients lightly.
Fill muffin tins 2/3 full and bake at 350 for 20 minutes.

Combine the
remaining 3/4 cup sugar and 1 teaspoon cinnamon.

When muffins are
finished baking and while still hot, dip in melted butter and then in
cinnamon-sugar mixture.

Country Mushroom Soup........
1/4 C. butter or margarine
1/4 C. flour
2 C. chicken broth
1/2 tsp salt
1/4 tsp. pepper
1 or 2 bay leaves
2/3 C. finely chopped celery
1/4 C. finely chopped onion
3 T. cooking oil
4 - 5 C. sliced fresh mushrooms (about 1 lb.)
2/3 C. half and half cream or milk

In a 2 qt. saucepan, melt butter; stir in flour until smooth.

Gradually
stir in broth until smooth.

Add salt, pepper and bay leaves.

Simmer,
uncovered for 15 minutes, stirring occasionally.

Meanwhile, in another
saucepan, sauté celery and onion in oil until tender.

Add mushrooms;
cook and stir until tender.

Add to broth mixture; bring to a boil.
Reduce heat; simmer uncovered for 15 minutes, stirring occasionally.

Add
cream; heat through.

Discard bay leaves.

How did ya'll manage yesterday?
I thought I was gonna die.
Just like I said...first place no a/c & to top it off, when I got there, "he & she" were in Vermont & the place was locked up tight!!!!...so "no air" either!
Sure didn't take me long to open the door and windows.....lol
I am sure when I left the place was clean BUT there WAS "an extra fly or 15 pooping on the walls" when I left!........lol
It takes me about 15-20 minutes to drive to the second place from the first one and all the way there....I was talking to myself (swearing some too), about the heat of the first place...telling "self" that IF there was no a/c...the t-shirt was coming off...didn't care!...not humane toi work like that...blah, blah....You know..the usual chitter one has with ones' self?
WELL! Lo & behold I walk through the door and crap! I thought I was inside a walk-in cooler!
"Mister" was home, (working from his home office)....& he said I know how bad you hate the heat...so thought I would "have it comfortable for ya".
Bless his big 'ol Italian heart!!..
Needles to say...I thoroughly enjoyed my "afternoon shift".
He & I chatted & did a bit of work...then we chatted some more,...then he made us lunch....lol then I finished vaccuming and packed up & headed across the top of the city...for home!
They are saying we broke records yesterday.
Apparently the temps rose to 33'c & with the humidex of the day....that was in the area of 107'f to 109'f!
Was it any wonder I was hot?....
How about you? What was the temp where you are?
A bad thing happened yesterday....gas in the Toronto area went up about 6-cents per litre! It should be in the vincinity of $1.34 to $1.35 per litre for regular grade. I had the volvo full,...(I gassed it up Wed. a.m. & it cost me $1.40-something per litre for high test)...sent dh out to gas up the grand am & his Mercedes,...wasn't too bad...$68.00 for the pair and that was for premium grade fuel in each of them too.
What are fuel prices where you are?
Actually...does it really mater what the price are...we have to do what we have to do and cut something else, right?
Drats!!!!!
I am off to "paint patio furniture" again today for Mrs. Tight-wad!
I hope to get the primer coat of the "sofa" piece and maybe the 2 chairs & the table...with finish coats.
IF it is hot & muggy like yesterday tho...I won't be painting...it wouldn't spread on the furniture! Last week was hard enough...it was much cooler BUT there was quite a breeze & the primer was drying 'tween the can & the piece!....(another reason I woulda liked to use Tremclad!.......)

Green Pea Salad with Easy Cream Dressing....
4 c. fresh or frozen green peas, cooked until just tender,
rinsed under cold water (I have not used fresh, but
have used frozen, which do well)

1 small carrot shredded
1/2 red bell pepper, finely chopped
1 onion, finely chopped, about 1 cup
1/2 c. finely chopped celery
1/2 c. light or regular ranch-style dressing
1/3 c. mayonnaise
1/4 tsp. dried leaf oregano
1/8 tsp. pepper
1/4 tsp. salt, or to taste

In a large bowl, combine the cooked cooled peas with the chopped and shredded vegetables.
In a measuring cup or small bowl combine the dressing, mayo and seasonings.
Stir into the veggies until well coated.
Chill for a few hours before serving.
Serves 5 or 6

Squash Casserole..........

3 pounds yellow crookneck squash
2 cups shredded sweet onion (2 medium size onions)
1 cup water
Salt & freshly ground pepper
1 stick butter (plus more for greasing the baking dish (optional)
2 teaspoons sugar (optional)
2 large eggs
1/2 cup milk
Vegetable oil spray for misting the baking dish (optional)
1 cup (4 ounces) shredded sharp cheddar cheese
1 cup crushed butter crackers

Place rack in the center of the oven and preheat oven to 350° F.

Cut squash crosswise into 1�?slices and place them in a medium size pot with 1 cup of the onion and the cup of water.
Season with salt and pepper to taste.
Bring to a boil over medium-high heat, then reduce the heat; cover the pot and let simmer until the squash is fork-tender.
Immediately drain the squash and onions and set aside.

Return the pot to the stove over medium heat and add the butter.
When it melts, sir in the remaining 1 cup of onions and reduce the heat to medium low.
Cook the onion, stirring until it softens, 4 to 5 minutes.
Stir in the reserved cooked squash and onion mixture and the sugar, if desired.
Cook until any water clinging to the squash evaporates, 1 to 2 minutes. Remove from heat.

In a small bowl whisk the eggs and milk to mix.
Stir the egg mixture into the squash mixture.
Season with salt and pepper to taste.

Lightly mist a 9x13�?glass or ceramic baking dish with vegetable oil spray or but it with softened butter.
Spoon the squash mixture into the dish.
Scatter the cheese on top followed by cracker crumbs.

Bake the casserole until it bubbles around the edges and the cracker crumbs are lightly browned, 30 to 35 minutes.

This can be halved and put in a 2 quart baking dish.

Crab Salad Croissants....
1 Pkg.(8 oz.) imitation crabmeat, chopped
1/2 C. mayonnaise
1/4 C. chopped celery
2 T. shredded cheddar cheese
1 T. finely chopped onion
1 tsp. prepared mustard
1/4 tsp. dill weed
1/8 tsp. salt
1/8 tsp. pepper
4 lettuce leaves
4 croissants, split

In a small bowl, combine the first nine ingredients.
Serve on lettuce lined croissants.
Yield - 4 servings.

Mookies.....
(Here is a favorite recipe of ours making cookies from
a muffin mix:)

1. Prepare any flavor packaged muffin mix according to the package directions -OR- make your own from scratch.
Preheat the oven according to package directions.

2. Drop by level tablespoonfuls on to a lightly greased cookie sheet. Bake about ½ of the time
specified for the muffins.
When done, remove from the cookie sheet and place on a wire rack to cool.

Mookies are best when on the soft side and eaten warm.
Put 2 together with a whoopie pie filling to make your own favorite mini-whoopie pies.
The possibilities are endless!..only as "limited" as YOUR Imagination!

I made these beans and served them as a side with the Cajun Chicken breasts. Added some barbecued grilled fresh corn on the cob and dinner was served.

Cajun Skillet Beans......

1 medium white onion, chopped
3 garlic cloves, pressed
3 celery stalks, chopped
2-bell peppers, chopped
1/4-tspn dried thyme
1/4-tspn black pepper
1/4-tspn salt
1/4-tspn cayenne pepper
1/4-tspn dried oregano
1/4-tspn dried basil
2-cups fresh ripe tomatoes, chopped roughly
1-tbspn honey
1-tbspn spicy mustard
2 cans of your choice black eyed peas and their liquid

Sauté onions and garlic until soft then do the same with the celery and bell peppers.
Add spices and cook until onion are golden.

Apple Sauce Raisin Bars......

Ingredients:

1 c. flour
2/3 c. brown sugar
1 tsp. baking soda
1 tsp. pumpkin pie spice
1 c. applesauce
1 egg
1/2 c. raisins

Directions:

Grease 13x9x2-inch pan.
Mix all ingredients thoroughly.
Spread in pan.
Bake about 25 minutes.
Cool.
Frost with butter icing.

Butter Icing

3 T. butter
1 1/2 c. powdered sugar
1 tsp. vanilla
1 T. milk

Heat butter in sauce pan over medium heat until a delicate brown color.
Blend in sugar, vanilla, and milk.
Beat until frosting is smooth.
If necessary, stir in additional milk a few drops at a time.

Peanut Butter Corn Flake Cookies.....(No Bake)

Ingredients:

3/4 c. sugar
3/4 c. white syrup
1 c. peanut butter
4 c. corn flakes cereal

Directions:

Bring sugar and syrup to a rolling boil and add peanut butter.
Pour mixture over corn flakes and mix until coated.
Drop onto parchment paper to cool.

Oatmeal Cookies with Cranberries and Raisins....(time consuming BUT well worth it)

This recipe originally came from Whole Health MD, I have altered it to make it lower in fat and sugar.

Ingredients:
2 c. old-fashioned rolled oats
1/2 c. coarsely chopped almonds
1/2 c. butter softened (Smart Balance of other substitute)
1/2 c. applesauce or purred prunes or half of each
1 c. packed light brown sugar
1/4 c. Splenda
1/2 c. ground flaxseed
3/4 c. unbleached flour
3/4 c. whole-wheat flour
1/3 c. toasted wheat germ
1 tsp. baking soda
1 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground cloves
1/4 tsp. ground allspice
2 large eggs (Egg Beaters 1/2 cup)
1 tsp. vanilla extract
1/2 c. raisins
1/2 c. dried cranberries

Directions:

Preheat oven to 350 degrees.
Spread oats on a pan and bake 10 minutes,
stirring midway until light golden.
Remove from oven and allow to cool.
Leave oven on.
In a small oven proof pan, toast almonds, stirring
frequently, about 4 minutes.
In a large bowl, combine toasted oats, ground flaxseed, all the flour, wheat
germ, spices, baking soda and salt.
Whisk well to combine.

With a mixer using the wire whisk attachment, cream butter and sugars until
light and fluffy.
Add the applesauce or pureed prunes and combine, add the
eggs and vanilla and mix well.
Stir in dry ingredients just until flour is
no longer visible (do not over mix).
Stir in raisins, cranberries and
almonds.

On a lightly greased cookie sheet ( I use parchment paper) drop with a well
rounded tablespoon.
Bake 10 minutes or until bottoms are just golden brown.
These cookies do not spread very much, you may like to flatten with the back
of a spoon, your option.

Big Fluffy Cake....

Ingredients:

 

1 box of any cake mix

4 egg whites

Oil per directions on box

Water per directions on box

Drop of vanilla extract

1 tsp. fresh coffee

 

Directions:

 

Combine wet ingredients with a hand blender only! 

Add dry ingredients and blend for 2 minutes without stopping. 

Bake at 350 degrees for time indicated on box. 

Ice and decorate with items of your choice and enjoy!

The "start" of another week for some is here!

Happy Sunday morning!

Quite muggy out there this morning already.

"The Ladies & I didn't mess around today...they wanted back in where it is cool & so did I!

Yesterday went sorta well......I painted a primer on the "sofa" & also top-coated 1 chair and the one table,(the other table for some reason she said NOT to do??????(her game, her rules!)

Today...I'll get the second chair done and the sofa too.

I had to quit yesterday because the paint was drying on the brush, before I could get it spread on the furniture.

I hated the thoughts of covering the road twice BUT even IF the paint had of stayed so that I could spread it...I had to let the primer coat on the sofa "season" 24 hours!

Working for this person...I follow the rules to the "T"!......NOT giving her 1 inch of space to put my azz in a sling! I will say tho.....IF this paint peels 'tween now and next season...it will be through no fault of mine!

BTW....had dh make some calls...IF she would of sent it out to be "professionally" done...her "Tab " would of been in the area of $1200-$1500!!!

I figure my "Tab" will be "in the area of $300-$400"!

I really don't think she was justified in offering me what she did originally, right?

Anyway...it is... what it is!

People!

I am very rapidily getting to the point lately....where I would very much rather "leave

them than take them"!!!!

Have you been disallusioned(sp) in your fellow mankind lately?

I guess it could be worse.......I could have no talent what-so-ever!

Just wish I had of made another "career choice" some days...Most of the time tho...I am happy...even working with the "weirdos"!

Magic Peanut Butter Cookies....
1 C. Peanut Butter (creamy or crunchy), I have found that "natural"
Peanut Butter has less carbs
1 C. Splenda
1 egg
1 tsp. vanilla
1/3 C. Splenda (for garnish)

Mix first 4 ingredients. Roll into balls.

Dip fork into Splenda and
"criss cross" cookies. Bake 350 for about 12 min.

STRAWBERRY EARTHQUAKE CAKE....
1 cup fresh strawberries, washed and mashed
1 1/4 cup powdered sugar
1 box white cake mix
1 cup shredded coconut
8 oz cream cheese

Preheat oven to 350°. Mix the cake mix according to package
directions.

Grease and flour a 13 x 9 x 2-inch baking dish or pan.

Layer
the shredded coconut on the bottom of the baking dish pan.

Pour 1/2 of
the prepared cake batter over the coconut. Cream together the cream
cheese, powdered sugar, and mashed fresh strawberries.

Drop the cream
cheese mixture in large dollops over the cake mix.

Pour the remaining
cake batter
over the top.

Bake in the preheated oven for 28 to 30 minutes.

Do not overbake.

Sweetened fresh strawberries can be placed over the top, if
desired.
Yield: 12 servings.

Dairy Delicious Dip.....
1 pkg. (8 oz.) cream cheese
1/2 cup sour cream
1/4 cup sugar
1/4 cup packed brown sugar
1 to 2 tbsp. maple syrup
In a small mixing bowl, combine cream cheese, sour cream, sugars and
syrup to taste; beat until smooth.

Chill.

Serve with fresh fruit.
Yield: 2 cups

Chile Relleno Casserole......
1 (18 oz.) can Ortega chilies, whole
6 to 8 corn tortillas, cut into wide
strips
1-1/2 lbs. jack cheese
2 tomatoes, sliced
1 doz. eggs
3/4 c. milk
1/2 tsp. salt & pepper
1 tsp. cumin
1 clove garlic, crushed

Grease a 9 x 13 inch casserole. Lay 1/2 chiles in pan. Top with 1/2
tortilla strips and 1/2 cheese.

Cover with tomato slices.

Repeat layering with remaining chiles, tortillas and cheese. Combine eggs, milk
and spices.

Pour over casserole.

Bake, uncovered at 350 degrees for 30
minutes until puffy hot.

Let stand 5 to 10 minutes before cutting.

Serve with salsa.

Makes 6 to 8 servings.

Creole Sauce....
3 tbsp. butter
1/3 c. chopped pepper
1/3 c. onion
1 (20 oz.) can tomatoes
1/2 tsp. Tabasco
1/2 tsp. sugar
3/4 tsp. salt

Melt butter in saucepan and add pepper and onion. Cook until tender, but
not brown and add remaining ingredients.

Cook over low heat about 30
minutes or until thickened.

Great over stuffed peppers.

Sweet Onion Chicken Casserole.....
3 to 4 boneless chicken breast halves
2 Tablespoons vegetable oil
3 to 4 large red-skinned or Yukon Gold potatoes, peeled and sliced
3 to 4 medium Vidalia sweet onions, peeled and sliced
1 can (10 3/4 ounces each) cream of mushroom soup, undiluted
salt, pepper, and paprika, to taste

Wash chicken and pat dry.

Brown chicken breasts in oil and drain on
paper towel.

Grease a 2-quart casserole.

Layer sliced potatoes on
bottom; follow with a layer of onions and top with a layer of mushroom
soup.

Gently, place chicken breast over soup and sprinkle with salt, pepper,
and paprika.

Cover tightly with lid or foil and bake at 350°F for 1 hour.

Serves 3 to 4.

Salmon Patties/Croquettes....
3 cups of leftover mashed potatoes
1 (14.75 oz) can of red salmon (remove skin)
2 eggs, well beaten
1/2 to 3/4 cup crushed saltines (just enough to hold mixture together)
try 1/2
cup first
Salt and pepper to taste
1/4 cup of the following...
finely chopped celery, green pepper, green onions (use
all of the onion), and grated carrots

1 tsp dried parsley (optional)
1 tsp olive oil or Vegetable Oil
1/2 tsp garlic powder or garlic salt
If you want to spice the patties up another notch - add
1 tsp dried onion flakes

I use Wondra flour to coat the patties. Don't care for too much for a  heavy flour coating.

I use butter and olive oil to fry the patties.

White Sauce for (2 cups) you can double or triple this recipe.

This recipe makes 2 cups of sauce.

I like lots of sauce so I double and sometimes triple the recipe, except for the peas.

I use maybe two cans for a triple sauce.

2 cups milk
2 tsp dries onion flakes
1 dash garlic powder
1/2 cups butter, melted
4 tablespoons flour
salt & pepper to taste
1 15 oz can petite, drained 

In saucepan, over medium heat, melt butter, whisk in flour. salt and
pepper until smooth (no lumps).

Then add the peas. .

If sauce is too thick, add
more milk.

If you want a richer sauce use heavy cream or 1/2 and 1/2 milk.

HoHo Cake.......
1 box Chocolate Cake Mix

Topping one
3/4 cup white sugar
1/2 cup butter or margarine softened
2/3 cup solid Crisco vegetable shortening
5 oz can Evaporated milk
2 teaspoon Vanilla extract

Topping two
1 can Fudge Frosting (16 oz)

Preheat oven 350 degrees. Lightly grease 15 1/2 " x 10 1/2'" jelly roll
pan.
Bake cake in jelly roll pan according to the directions on the box for
20-30
minutes or until cake tests done.

Allow to cool.

Mix sugar, butter, Crisco, evaporated milk and vanilla extract together until creamy with an
electric mixer, about 10 minutes.

Spread over cooled chocolate cake.

Heat opened can of fudge frosting in the
microwave 30 seconds to 1 minute till pourable. Pour over white topping.
Refrigerate over night.

Roadhouse Potatoes......
1 (32 ounce) bag frozen southern style hash browns
1/4 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup onion, chopped fine
1 (10 3/4 ounce) can cream of chicken soup
1/2 pint sour cream
1 small jar cheez wiz
1/2 cup crushed corn flakes
1/4 cup butter, melted

Combine first 8 ingredients and place in a large, greased casserole.
Combine Corn Flakes with the melted butter and sprinkle on top.

Bake at 350'f for 45 minutes.

The temp thingy seems to be a wee bit "under the weather"!..lol

Just as I posted to this page...I heard them say on the radio it was 19'c...and the temp thingy is reading as 16'c???

So truly....I don't know what the dang temp is!..lol

I do know it is sticky outside BUT wonder-bar in here!

The Ladies....don't mess around either when it is so hot.

They just said the temp today should be 32'c/humidex...feel like 40'c!

First place "might" have a/c on....second WILL NOT!

I have already put a beer in the frig. to chill and await my arrival this p.m.!.....lol

About 7 I think last night we had some bad wind and really heavy rain....BUT it didn't last long...heard there may of been a tornado touch down in the London area about 2 hours OR so west of where I am....

Hope not.

Soooo? How was your weekend?

Do anything exciting?

If ya have read the Saturday & Sunday posts....then ya know how mine was!...I painted & sweated...then painted some more!....lol

I didn't get it finished yesterday either!

I will on Tuesday afternoon tho. It was so humid yesterday...I couldn't turn over "the sofa" to paint the other side...it stayed "tacky" a lot longer than normal.

No problem...I'll finish it Tuesday!

I did get a scare tho when I went there..."She" came out from the "library"....limping---badly!

She had taken a tumble down the basement stairs Saturday evening and got her foot hooked into the railing...result:...she was left hanging sorta upside down with her foot trapped!!!!!

She ius one tough old cookie tho...she called herslef  taxi and went to the hospital...and they said they didn't have staff there to read the X-rays BUT took them anyway...then told her to go home and put ice on it & to not be surprised if "the x-ray reader" called her in a couple of days saying there was a hair-line fracture. She said she got home about 2:30 a.m.(so this must of happened early in the evening,....'cause we have 6-10 hour waits in out emerg. room here for none life threatening "emergs.").

Anyway..she is gimping around and won't let anyone do anything for her & threatened me IF I called her sons!..lol

She is just like a Timex...@ 75 years...& twice as ornary!

A 38-1 long shot won it!

"Big Brown" came in dead last, they say. (I also heard he came in 3rd.)

Just heard now there was a photo finish for 3rd, with 2 horses!

Meat Ball Delight.......

2 lb. ground beef
Sage ( about 2 Tbsp.
Salt & Pepper , to taste)
3 medium onions
2-3 Tbsp flour
2-3 Tbsp butter
2 cans stewed tomatoes

Divide meat into 12 meat balls spiced with sage, salt and pepper to taste.

Place in a casserole with the onions sliced on top. melt butter in a saucepan, add flour and canned tomatoes.

Stir over low heat until slightly thickened.

Pour over meat balls and bake 350º for 1 ¼ hours.

Serve with noodles.

Microwave Risotto........

2 cups chicken or vegetable broth
2 tablespoons butter
1 small onion, minced
1 cup Arborio rice
1 pinch saffron
1 cup water
1/3 cup white wine
1/3 cup parmesan cheese - the real stuff!

Measure all ingredients into little bowls or whatever before you start to cook. Add the onion and butter to a 4-cup microwave-safe casserole with cover. Microwave covered, on high for 3 minutes.

Remove cover and continue cooking uncovered.

Add wine, rice and saffron.

Stir and cook 2 minutes on high.

Add 1 cup broth, stir and cook on high 5 minutes.

Stir in remaining broth and cook on high for 10 minutes stirring half way through. Stir in 1 cup water.

Cook on high 9 minutes, stirring midway. Add Parmesan and stir.

Taste for seasoning.

Serve immediately.
Serves 4.

Meatloaf........
2 lbs. ground beef
1/4 to 1/2 cup diced green peppers depending on taste
1/4 to 1/2 cup chopped onions
1/2 cup oatmeal
2 Tbs. Worcestershire sauce
1 can tomato sauce
1 tsp. salt
1 tsp. pepper

Mix well and form into a loaf and place in a pan sprayed with Pam.

Then I peel potatoes and slice.

Place them around the meatloaf in the pan and spray with Pam.

Sprinkle with salt and pepper and cover with foil.

Bake about 1 hour and 15 minutes at 350 degrees.

Remove foil and bake another 15 to 20 minutes until potatoes are tender and meat is browned.

Ice Cream Bread.......

Ice cream gets a whole new use in this recipe! Be sure to use full-fat ice cream for best results.

1 cup butter pecan ice cream, softened
3/4 cup self-rising flour
1 tablespoon sugar

In a small bowl, combine the ice cream, flour and sugar.

Transfer to a 5-3/4-in. x 3-in. x 2-in. loaf pan coated with cooking spray.

Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from pan to a wire rack.

Yield: 1 loaf (6 slices).

Flourless Chocolate Cake w/ Raspberry Sauce.....

Cake:

7 oz. semisweet baking chocolate, broken into pieces �?I used deep dark bittersweet chips
12 tbl. butter
5 eggs, separated
1 tsp. vanilla �?I used raspberry extract
1/3 c. sugar
2 tbl. unsweetened cocoa powder
1/8 tsp. salt

Raspberry Sauce:

1 pkg. �?12 oz. �?frozen unsweetened raspberries, thawed
1/3 to ½ c. sugar
Additional cocoa powder for garnish �?I didn’t use

For the cake, preheat oven to 350º F. Grease 9-inch springform pan. (I used cupcake pans with paper inserts).

Heat chocolate and butter in med. saucepan over low heat until melted, stirring frequently.

Remove from heat, whisk in egg yolks and vanilla.

Blend in sugar, 2 tbl. cocoa and salt. Beat egg whites to soft peaks in large bowl.

Stir about ¼ of egg whites into chocolate mixture.

Fold chocolate mixture into remaining egg whites.

Spread batter evenly in prepared pan. Bake about 30 minutes or until toothpick inserted in center comes out clean and edge of cake begins to pull away from side of pan.

Cool cake in pan on wire rack 2 �?3 minutes; carefully loosen edge of cake with sharp knife and remove side of pan. Cool cake completely.

Cover and refrigerate overnight or up to 3 days, or wrap well and freeze up to 3 months.

For sauce, blend raspberries in blender or food processor until smooth.

Strain sauce and discard seeds and stir in sugar to taste.

Fudge Cookies.....
Makes 16 cookies

1/2 cup semi-sweet chocolate chips
5T unsalted butter
1 egg
1 tsp. vanilla extract
1/3 c. white sugar
1/4 c. all-purpose flour
1/2 tsp. baking powder
2 TB unsweetened cocoa powder
pinch salt (1/8 tsp.)
1/3 c. walnuts, chopped or pieces
1/3 c. semi-sweet chocolate chips
1/3 c. raisins

Melt butter and 1/2 c. chips in microwave, stirring till smooth.

In medium bowl whisk egg, extract, and sugar.

Make sure to whisk it really well.

Stir in the melted chocolate mixture.

In a separate bowl combine the flour, powders, and salt.

Mix in with chocolate mixture until barely incorporated.

Mix in the remaining 1/3 c. chips, nuts, and raisins.

Cover and chill for one hour. Place by tablespoonfuls on greased cookie sheets, then press down each cookie lightly with the back of a spoon.

Bake at 325 degrees for 13-15 minutes. Remove from oven when slightly puffy. Cookies will solidify as they cool.

Creamy Parmesan Risotto......

3 to 4 cups low-sodium chicken broth
4 tablespoons unsalted butter
1 medium onion, finely chopped
1 clove garlic, minced
1 1/2 cups Arborio rice
1 cup dry white wine, such as Pinot Blanc or Sauvignon Blanc
1/2 teaspoon kosher salt
1/4 tablespoon freshly ground black pepper
1/4 teaspoon freshly ground black pepper
1/2 cup freshly grated Parmesan, plus more for serving

In a medium saucepan, bring the broth to a simmer and keep warm over low heat.

In a separate medium saucepan, melt 2 tablespoons of the butter over medium heat.

Add the onion and garlic and cook, stirring with a wooden spoon, until the onion is transparent, about 5 minutes.

Add the rice and cook, stirring, until it is well coated with the butter and starts to turn translucent, about 2 minutes.

Add the wine and simmer gently until all the liquid is absorbed, 3 to 5 minutes.

Ladle 1/2 cup of the warm broth into the rice mixture and simmer, stirring occasionally, until the broth is absorbed.

Repeat, adding 1/2 cup of broth at a time, until the rice is cooked through but still firm, 20 to 25 minutes total.

Add the remaining butter and the salt, pepper, and 1/2 cup of Parmesan.

Stir to incorporate.

Adjust seasoning with more salt to taste.

Serve immediately, topping with
additional Parmesan.

HOT BEAN AND BACON SALAD.......
1 pkg. frozen cut string beans
3 tbsp. vinegar
2 tbsp. olive oil
1 tsp. sugar
1/8 tsp. pepper
1/2 c. sliced onions
1 tsp. salt
Dash oregano
4 strips bacon, cooked & crumbled

Cook green beans until done but slightly crispy.

Drain.

Mix together everything but the bacon and pour over the beans.

Let stand 30 minutes.

Sprinkle with bacon, heat a few minutes and serve warm.

SWEET POTATO AND BACON SALAD....
2 lbs. sweet potatoes, peeled and cut into 1 inch chunks
1 sm. unpeeled apple, cut into 1/2
inch pieces
2/3 c. sliced celery
1/4 c. olive oil
2 tbsp. apple cider vinegar
2 tbsp. Dijon mustard
1 1/4 tsp. salt
1/4 tsp. black pepper
1/2 c. chopped walnuts
1/2 c. white grape juice
9 slices bacon, cooked and crumbled

Cook potatoes until tender.

Drain and place in large bowl: add apple and celery.

Whisk grape juice, oil, vinegar, mustard, salt and pepper until blended.

Pour over potato mixture, toss, let stand about 1/2 hour.

Add walnuts and bacon before serving.

We sure did get some "weather" last night...OR so they tell me...lol...I slept throught it! I went to bed at 8:30!

'Tween the temps & old age...I was "dun-in"!

I just heard them saying that Monday we broke a temp. record set back in 1950, which was 32.2'c(around 90'f., I think), Monday was 32.8'c....dang-it-all-HOT!...not counting the humidex either!

Just heard that Chatham got 6 cm of hail & some guy on the the "course" at Royal Woodbine Golf,...was hit by lightening! Said his clothes were still smoking when the paramedics arrived.

Have I said yet this year?....I Hate Summer!......lol

"The Ladies" & I escaped a bullit this morning.....well not literally BUT I could sure "smell" something in the wind......immediately as we stepped right out the front door of my building!

I think one of those "black & white kitties" had made their presence known in the area.....I bet someone is bathing their dog this morning!!!!.....

Other than the smell, we saw no one, not even the 2 paper guys!

I have been intending to mentioned this other thing too BUT keep forgetting........

Has anyone ever noticed the "Birds"?

I sometimes go out around 3 a.m......and they are always "singing". Do they ever sleep.......and is it ever "silent" out there?

I don't mind it.believe me!(I sure as heck would much rather listen to birds chirping that ill-mannered, poorly disciplined kids screeming as they "play"!!!!!!!!(why do kids think they hafta screem to have a good time?..crap! that's a topic for another day, right?)

Anyway....I like the sound of the birds....

Yesterday was a really good day as far as work is....Went to first call and was told I wasn't supposed to be there...they said they told me they were going away & I was supposed to "skip" yesterday! They did tell me about their holiday BUT told me they were leaving on the Tuesday!!!(today)!

Anyway...they let me stay & I cleaned anyway, they left...I set the alarm and was outta there in just under 3 hours, with NO interruptions! Went to second call and no one was home there, changed 2 beds, laundry and re-made beds...plus the "norm" and outta there in just under 3 hours too!

Was home around 4!

Was nice to be home before "dark"..lol

Today....I have 1 call in Markham and then down to the West-end to finish that painting! Have to get that done today....I want to get paid! Have 4 -partial days invested in that...lol.

What does your day have in store for you?

How are the gardens coming, btw?

Bet this rain is helping them, right?

I guess the rain is "helping the grass" too?.....lol....sorry, can't have one without the other!

Pina Colada Fruit Salad.......
1- 8oz. pina colada yogurt
1 cup marshmallow creme
1- 20 0z. can pineapple tidbits (drained)
1 lg. can mandarin oranges (drained)
1 cup miniature marshmallows
1/2 - 1 cup coconut
chopped pecans (optional)

Mix yogurt and marshmallow cream together.(I have been know to add a
gluck or two of rum to this mixture.) Then add the rest of the
ingredients.

Keep refrigerated.

Pineapple Orange Pound Cake.....
Ingredients for 1 cake

CAKE
1 pk Duncan Hines Moist Deluxe Pineapple Supreme Cake Mix
1 pk Vanilla Instant Pudding and pie filling mix (4-serving)
4 Eggs
1 c Orange Juice
1/3 c Oil, Crisco; or Puritan
1 TB Orange Peel; grated

GLAZE
1/3 c Sugar
1/4 c Orange Juice

Preheat oven to 350 degrees.

Grease and flour 10-inch Bundt pan.

2. For
cake, combine cake mix, pudding mix, eggs, 1 cup orange juice, oil and
orange peel in a large bowl.

Beat at medium speed with electric mixer
for 2 minutes.

Pour into pan.

Bake at 350 degrees for 50 to 60 minutes
or until toothpick inserted in center comes out clean. Cool 25 minutes
in pan.

Invert onto serving plate.

3. For glaze, combine sugar and 1/4
cup orange juice in small saucepan. Simmer 3 minutes. Brush warm glaze
on cake.

TANGY BROCCOLI SALAD.....
1 cup fat-free mayonnaise
2 tablespoons sugar
2 tablespoons vinegar
1 medium bunch broccoli, cut into flowerets (about 6 cups)
4 cups loosely packed torn spinach
1/2 cup thinly sliced red onion
1/4 cup bacon bits
1/4 cup raisins

Mix dressing, sugar and vinegar in large bowl.

Add remaining
ingredients; mix lightly.

Refrigerate 1 hour or more.
YIELD: 10 Servings

Quick Coconut-Pecan Upside Down Cake.......
8 tb (1 stick) butter, softened
1/2 c Dark brown sugar
1/2 c Shredded coconut
2/3 c Chopped pecans
1/2 c Semi-sweet chocolate
2 tb Milk
1 c Flour
1/2 c Sugar
1 1/2 ts Baking powder
1/4 ts Salt
1/2 ts Vanilla
1/3 c Water
1 Egg

Preheat oven to 350. Melt 4 TB. butter in small saucepan. Remove from
heat, stir in brown sugar, coconut, pecans, chocolate morsels, and milk.
Blend well.

Spread mixture evenly in bottom of 9" round cake pan. Set aside.

Stir together flour, sugar, baking powder, and salt in mixing
bowl.

Add remaining butter, vanilla, water, and egg.

Beat batter until
smooth.

Pour over coconut-pecan mixture in pan and bake for about
30 minutes or until toothpick comes out clean.

Cool 5 minutes, turn out on plate.

Banana Split Pie....
1 graham cracker crust
1 (4 ounce.) package. sugar-free instant
vanilla pudding mix
2 Cups low-fat milk
2 bananas, sliced
1 (15 ounce.) can crushed pineapple
1 Cup Cool Whip
1 Teaspoon vanilla
1/2 Cup pecans, chopped
.
Mix pudding with milk and beat until thick, pour into crust.

Put bananas
over pudding. Squeeze pineapple to remove all juice. Sprinkle on top of
bananas.

Cover with Cool Whip, sprinkle pecans on top.

Chill well.

"The Ladies"  & I had a very good walk this morning....only saw one paper guy,(the nice one)..a few TTC buses...and a bunch of cars with people in them... that by their "speed" seemed to be in a hurry to get to OR away from something!...

I went to bed last night REALLY early again...lol

I started to watch NCIS at 8:00 p.m. & it was a repeat so I just got up and went to bed!

Why sit & watch repeats......when I could be sleeping, right?

What did you end up doing yesterday?

I did NOT get to "the paint work" yesterday. I broke my glasses at first call....(before I started work)....so I bungled through it and then came down to the Mall near where I live and went to the "glass place, to get a new frame for my "glasses" which was okay. They wanted "$140.00 for the frame and $25.00 for inserting them!!!!!!

The frame was only a flimsy little piece of wire, not even as thick as a "dry-cleaners' coat hanger"!

ROBBERS! without a gun!

NOT happening on my watch! Went to the dollar store and bought 6 pair for $1.00 each pair, plus 14-cents tax on each pair.... and they will have to do.

They are "3.75"...same strength as what I wanted fixed!

Guess I will hafta do the painting on Saturday...pray for a nice, not too hot OR windy day for me, okay?

Today I have 2 places...they are both sorta easy. Bathrooms in the first one are always "a chore" but other than that, "she" maintains pretty well.

Second is all wood floors, so that makes it real easy,...BUT I know the a/c will NOT be on there tho!

Ahhhhh well!..... IF I could just figure out how to lose weight in these places that WILL NOT use the a/c...then I would ask them all to leave it turned off!...lol

Slow Cooker Chicken and Dumplings.....

4 skinless, boneless chicken breast halves
2 tablespoon butter only
2, 10.75 oz., cans condensed cream of chicken soup
1 onion, finely diced
2, 10 oz., pkgs. refrigerated biscuit dough, torn into pieces

Place the chicken, butter, soup and onion in a slow cooker, and fill with enough water to cover. Cover and cook for 5 to 6 hours on HIGH.

About 30 minutes before serving, place the torn biscuits dough in the slow cooker.

Cook until the dough is no longer raw in the center.

Serves 8.

(I will add 1 teaspoon poultry seasoning, maybe a Baby leaf, 1 cup baby carrots, 1 cup peas & pearl onions and instead of the water I will go ½ water and ½ chicken broth from the box.

Also I will cut the biscuit dough into it.

I have seen a recipe with 2 potatoes cubed and put in the mixture.)

Frito Chili Pie..........
1 pkg. Fritos regular size chips
1 can chili
1 package shredded cheddar cheese

Heat chili, pour over a layer of chip in each small bag, add cheese on top and enjoy. I

 think the recipe for a regular size package but you could do this with the small package also.

Cajun Skillet Beans......

1 medium white onion, chopped
3 garlic cloves, pressed
3 celery stalks, chopped
2-bell peppers, chopped
1/4-tspn dried thyme
1/4-tspn black pepper
1/4-tspn salt
1/4-tspn cayenne pepper
1/4-tspn dried oregano
1/4-tspn dried basil
2-cups fresh ripe tomatoes, chopped roughly
1-tbspn honey
1-tbspn spicy mustard
2 cans of your choice black eyed peas and their liquid Saute onions and garlic until soft then do the same with the celery and bell peppers.

Add spices and cook until onion are golden.

Add all other ingredients except peas and simmer five minutes -- covered.

Add peas and cook until peas are heated through.

Chicken Bermuda.......

8 boneless, skinless chicken thighs (she uses 12)
1 10-oz can chili sauce (she uses 1/2-cup)
1/4-cup apple jelly
2-tbspn snipped green onions
2-tbspn fresh lime juice
1/4-tspn hot pepper sauce
1/4-tspn allspice
1-tspn nutmeg

Heat oven to 425 degrees.

Combine all ingredients except chicken.

Brown chicken and arrange in a single layer in a greased baking dish.

Do not over crowd dish.

Pour chili sauce mixture over the chicken.

Bake at 425 degrees for 45 minutes.

Lemon Crisp Cookies......

1 box (regular size) lemon cake mix
1 c. crisp rice cereal (Rice Krispies)
1/2 c. butter, melted
1 egg, beaten
1 T. grated lemon zest

Preheat oven to 350 degrees.

In a large bowl, combine all ingredients until well mixed.

Shape into 1 inch balls.

Place 2 inches apart on ungreased cookie sheets.

Bake for 10 to 12 minutes or until set.

Cool for 1 minute; remove from pan to a wire rack to cool completely.

Makes about 4 dozen cookies.

Spiced Tea Mix.......
1 cup Tang (Orange flavored powdered drink mix)
1 cup Instant Lemon Tea Mix
1/2 tsp ground cloves
1/2 tsp ground cinnamon

Thoroughly combine all ingredients together then transfer to a sealable container

(I use a pint Mason jar with lid).

For hot tea, place about 1
1/2 teaspoons of the mix in a cup and either add boiling water and stir or add cold water, stir and place in a microwave on HIGH for
approximately 1 minute and 15 seconds.

For cold or iced tea, place about 1-1/2 teaspoons of the mix into a glass; add ice and water and mix until
the mix is dissolved.

Cook's Note: After you make the first batch, make a cup or glass of tea and adjust the ground cloves and ground cinnamon to your personal taste.

Chocolate Frosting with a " Feature Bonus"!

1 Stick of Butter or Margarine
3 Tbls. Cocoa
6 Tbls. Milk

Bring the above ingredients to a boil over medium heat.

Remove from heat and add:-
1 Lb. Box or (4 cups) Confectioners' Sugar (Icing)
1 Tsp. Vanilla

Mix above vigorously to incorporate all the sugar, then add a cup of whatever nut choice you make. 

Frost whatever you've baked while it's hot, and the frosting is hot.

Bakers' Note:- I've also discovered that if I pour the entire contents into a buttered 8" cake pan, and let it set for about 45 mins. in the fridge, I have the best fudge! And, for me that's a bonus recipe!

Old Fashioned Meatloaf......

2 lbs. ground beef
1/2 cup bread crumbs, recipe called for ¼ cup
1 egg, beaten
6 tablespoon onions, finely chopped, (recipe calls for 1 tablespoon)
salt and pepper to taste

Mix meat with well beaten egg, onions, bread crumbs, salt nd pepper.

Mold into a firm loaf or roll.

Place in a 350º preheated oven and bake for 1 hour or until done.

Also what I add is after the hour in the oven I then add catsup to the top of the meatloaf and return to the oven for 15 minutes.

My DH needs the catsup with any meatloaf I make.

It is so good.

Michelle's Chocolate Cookies....

1 box German chocolate cake mix
2 eggs
1/2 c. butter, melted
1/2 c. quick cooking oatmeal
1 c. chocolate chips
1/2 c. raisins

Preheat oven to 350 degrees.
In a mixing bowl, combine the first 4 ingredients; mix well.

Stir in the chips and raisins.

Drop by heaping teaspoonfuls 2 inches apart onto ungreased cookie sheet
Bake for 9 to 11 minutes or until set.

Cool on cookie sheet for 5 minutes before removing.

Put cookies onto wire rack to cool completely.

ENJOY!

Things are good here in Toronto again this morning.

Nice pleasant "Walk" this morning....just the right temp too!

How is it where you are?

There sure has been some up-side-down weather for some...Our prayers are surely with those families devastated affected.

I really don't have very much to tell today...yesterday was a "sweat-box" kinda day....first place it was 76 inside........I was soaked....

Second place......The dang furnace came on.....it was 78....what can I say......I was wet there too!

Came home, made supper....drank 3 bottles of water..over and above the 2 I drank while driving home!.......then I went to bed.

The heat depresses me..I get so frustrated with it...I get "mad" at the heat....lol

Today.....I KNOW it will be in the area of 79 to 80 degrees.....when I walk in that house & there WILL be NO a/c on!

I cannot understand for a second....how I keep the weight on that I do....I walk all day long and I sweat.....even in the Winter......

What's with that?

Anyway....the second place will be cooler...'cause they mainly live in their basement.......so that is where the majority of work takes place.

The "Main floor" is just a "lick & a promise"!

Ham Appetizer Sandwiches

1 cup butter, softened
3 Tablespoons poppy seeds
1 onion, grated
1 Tablespoon Worcestershire sauce
2 Tablespoons prepared Dijon-style mustard
2 (12 ounce) packages white party rolls (King's Hawaiian)
1/2 pound chopped cooked ham
5 ounces shredded Swiss cheese

Preheat oven to 350 degrees.

In a medium bowl, mix
together butter, poppy seeds, onion, and Worcestershire
sauce and prepared Dijon-style mustard.

Slice rolls in half
horizontally and set aside tops.

Spread bottoms with the
butter mixture.

Top with ham and Swiss cheese.

Replace
tops.

Arrange rolls in a single layer in a medium baking
dish.

Bake in the preheated oven 10-12 minutes, until rolls
are lightly browned and cheese is melted.

Brown Sugar-Cinnamon Sour Cream Banana Bread

Preheat oven to 325° (dark metal pan, 350 for
light-colored metal or glass)

3 cups flour
1/2 cup white sugar
1 cup light brown sugar
1 or 2 tsp. cinnamon (your choice)
3/4 tsp. salt
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
3 Tbsp. vegetable oil
3 eggs
2 tsp. vanilla
3/4 cup orange juice
4 heaping Tbsp. sour cream
3-4 very ripe bananas (2 cups)
1-½ cups chopped pecans (optional)

Combine dry ingredients. In another bowl, combine beaten
eggs, oil, vanilla, orange juice and sour cream. Make a well
in center of dry ingredients and mix in liquid ingredients.

In small bowl, mash bananas with fork. Continue bananas with
hand mixer until pureed and as smooth as possible. Add to batter; do not over-mix.

Stir in nuts, if desired. Grease two 9"x5" loaf pans with cooking spray. (I use a dark metal pan-
if different, raise temp to 350 degrees)

Divide batter evenly.
Bake for 50-55 minutes, checking with LONG wooden pick.
Bread is done when pick comes out clean.

Cool in pans for
15 minutes, remove to wire rack and continue to cool. Wrap tightly in plastic when cool.

Bread will be moister the next
day.

No need to refrigerate. Don't eat right away -patience
is a virtue with banana bread!

NOTES: 3 large (10-inch)
bananas or 4 medium bananas will make the required 2
cups of banana puree. Sprinkle cinnamon on top before
baking and swirl with a fork for a nice look.

You can also
sprinkle chopped nuts on top before baking for a nut
studded top.

This is good with chocolate chips (if you're
a chocolate freak). I would reduce the white sugar, if you
plan to do this.

I have made this with all light brown sugar and no white,
or sometimes dark brown sugar. Feel free to fiddle with
what you have on hand. Dark brown doesn't disperse as
well as light, so be aware that you will have a few "pockets"
of dark brown sugar (again, your personal preference).
Makes one 9 x 5" loaf or 3 minis.

Mandarin Orange-Crushed Pineapple Cake......
Cake:
1 box Yellow Cake Mix
1 box instant vanilla pudding mix
1 cup Crisco Oil
4 large eggs
1~ 11-ounce can mandarin oranges (DO NOT DRAIN)

Icing:
1 12-ounce (med. size) container of Cool Whip, thawed
1 box instant vanilla pudding mix
1 large can crushed pineapple

Grease and flour 2 round cake pans.
For Cake: In large bowl, mix all ingredients together,
beating with mixer for 2 minutes.

Divide cake batter
evenly into prepared pans. Bake according to package
directions. (I use dark coated Teflon pans, and bake at
325 degrees for 30 minutes, or until toothpick inserted
comes out clean)

Cool cake for at least an hour.

Icing: In large bowl, empty container of cool whip, box
of vanilla pudding mix and crushed pineapple (undrained).
Mix well with either large spoon, or beater.

Spread icing
on the first cake layer, adding second cake layer and
spreading the remainder of icing. DELICIOUS!!!!

Chocolate Caramel Oatmeal Chews

 
Ingredients:
2 cups oats
1 3/4 c. flour, divided
3/4 c. brown sugar
1 tsp. baking soda
1 c. butter, melted
1 c. butterscotch caramel topping
1/2 c. chopped pecans
1 6 ounce package semi sweet chocolate morsels

Preheat oven to 350.

Spray baker with cooking spray.
Combine oats, 1 1/2 cup flour, brown sugar and baking
soda.

Add butter; mix until crumbly.

Reserve 1 c. of the
crumb mixture.

Press remaining crumb mixture onto the
bottom of the baker.

Bake 15 min.

Combine the caramel
topping with the remaining flour.

Whish until smooth, then
drizzle over bottom of crust.

Spread to edges.

Combine
pecans and reserved crumb mixture and then sprinkle
those and the chips over the caramel mixture.

Bake 15
min. more.

Remove from oven and cool.

Yields: 24 bars.
Also yummy served warm with ice cream!

BERRY-TOPPED BLINTZ BAKE

Yield: 6 servings
BLINTZ:
4 ounces cream cheese, softened
8 ounces small curd cottage cheese
3 eggs, plus one egg yolk
1/4 cup plus 1 Tbs. sugar
1/2 cup plus 1 Tbs. flour
3/4 teaspoon vanilla
3/4 cup sour cream
1/4 cup milk
1/4 cup butter, melted
1 teaspoon lemon peel, grated
1 tsp baking powder
TOPPING:
1 cup fresh or frozen mixed berries, thawed
3/4 cup blackberry of blueberry syrup

Preheat oven to 350 degrees.

Butter an 8-inch square dish with 2-inch high sides (2 quart pan).

BLINTZ: Place cream cheese, cottage cheese, the egg yolk, 1 Tbs. of sugar, 1 Tbs. of flour and vanilla in a blender container.

Blend on low speed until smooth, stopping and scraping down side of container once.

Transfer cheese mixture to bowl; set aside.

Do not wash blender.

Place the 3 eggs, sour cream, milk, butter and lemon peel in blender container.

Blend on medium speed until smooth.

Add combined 1/2 cup flour, 1/4 cup sugar and the 1 tsp. baking powder. Blend on high speed until smooth.

Pour half of the batter into the baking dish.

Drop small spoonfuls of cheese mixture in evenly spaced rows on top of batter.

Pour remaining batter on top.

Bake until puffy and edges begin to turn golden, about 45 minutes.

TOPPING: Combine berries and syrup in a small saucepan.

Heat over low heat until warm, stirring occasionally.

Cool blintz on wire rack for 5 minutes.

To serve, cut into squares; top with berries.

Makes 6-8 servings.

I am so much cooler than yesterday!......lol
First call I had to take my shoes & socks off. My feet just ballooned up with the heat! Second place was okay doing the downstairs area.....
BUT WOW!....the upstairs was like a bakery!
I know I complain & some have even commented about no a/c,... no work,(myself included)...BUT I guess for some,... it is comfortable....(I am very grateful that I can say about the majority of my clients....."good thing they are cool Folk"!)...lol...
 
Today is the client that just bought a place in Italy. He will have the a/c on!! Yipppppppeee!
 
The second place WILL NOT!....
OH well!
This is the place with the 2 cats & the dog that line up at the front door for their "treats" when they see me coming.....(you know..the cats with attitude?)

Favorite Lemon Cake

1 (18.25oz.) Betty Crocker Lemon cake mix
1 (14oz.) can condensed sweeten milk
1(3.4oz.) box instant lemon pudding mix
1(8oz.) Cool Whip, thawed

Make cake as directed and bake in 9x13 pan.
Let cool 5 minutes.
Poke holes in cake with chop stick or spoon handle. Pour condensed milk over top of warm cake.
Allow to cool.
Mix instant pudding mix as directed then put on top of cake.
Then cover top of cake with Cool Whip.
Need to refrigerate.

Mix a batch of your favorite cup cakes. Fill about 2/3 full. Then spoon the following filling in. You will not even need to frost if you do not wish.

Cupcakes........

Filling
1 8 ounce package cream cheese
1 egg
1/3 cup sugar
Mix well. Add
1/2 package mini chocolate chips stirring well.

Put about 1 rounded tablespoon into each cup cake.
Bake as normal.
Tastes like you have cheesecake and cake together.

Great Cole Slaw....

3 cups green cabbage, coarsely shredded
1/3 cup bacon, crumbed
5 tablespoons blue cheese, crumbled
½ cup blue cheese crumbled
1/2 cup Marzetti Slaw Dressing
¼ to 1/3 cup cherry tomatoes, cut in half

Combine green cabbage, bacon crumbles, ½ cup blue cheese and add the slaw dressing and toss well.
Chill at least 4 to 6 hours to blend flavors.
When ready to serve garnish with tomatoes and the 5 tablespoons of blue cheese.

Scalloped Corn....
1 beaten egg
1 c milk
1 17 oz can cream style corn
1/4 c chopped onion
3 T chopped pimiento

Combine egg, milk, 1/4 t salt and dash pepper.

Stir in corn, onion and pimiento. Bake uncovered @ 350 for 1 hour or till knife comes out clean.

Serves 6.

Spinach Casserole...
2 10 oz frozen spinach thawed and drained
1 can cream of mushroom soup
1 8 oz brick cream cheese
I can fried onion rings

Blend all the ingredients and 3/4 can of onion rings.

Bake at 350 until hot and bubbly.

Then top with the remaining onion rings.

Zucchinni Relish.....
Makes 5 or 6 pints

10 cups shredded zucchini
4 cups chopped onions
5 tablespoons salt

Mix above ingredients and let stand covered overnight.

Drain and rinse well 2 or 3 times.

Add:
2-1/2½ cups white vinegar
4 bell peppers (chopped)
4 cups sugar

Add:
1 tsp each of:
Dry mustard
Tumeric
Celery seed
Black Pepper

Boil slowly for 30 minutes
Put into hot sterilized jars.

This is the recipe I got from my mother, going to copy it just as she wrote it. Enjoy, this is great!

All Baked In Only One Pan

Chicken, peaches, biscuits, gravy.

Heat oven to 425'f degrees.

Dip cut up chicken in 1/2 cup undiluted evaporated milk, then roll in a mixture of 1 cup Bisquick, 2 tsp salt, 1/4 tsp pepper, 2 tsp paprika.

Melt 1/2 cup shortening in a 13x9x2 pan in the oven.

Add the chicken skin side down.

Bake 50 to 60 min. Meanwhile make Bisquick drop biscuits using undiluted evaporated milk.

Move chicken to one end of the pan.

Drain a large can of peach halves, arrange on the chicken.

Spoon biscuit dough into the other end of the pan.

Bake for 15 minutes more.

Remove food to hot plates.

For gravy, blend 1/4 cup bisquick mixture, saved from dipping, into the pan.

Stir in gradually 1 cup of water, boil and stir 2 minutes.

Stir in 1 cup evaporated milk.

Heat but do not boil. Add salt and pepper to taste.

(Mother always used 1 whole frying chicken cut up. I use butter in the pan instead of shortening and any pieces of chicken will do. Boneless, skinless chicken breast halves do very well here, just cut down the time since they will cook much faster. And the drop biscuit recipe is on the box of Bisquick.)

Our Favorite Chocolate Cake....

2 c all purpose flour
2 c sugar
2/3 c cocoa
1/4 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
2 eggs
2 tsp. vanilla
2/3 c oil
2 c boiling hot water

Sift dry ingredients in a large bowl.

Make a well & add eggs, oil, & vanilla, mix.

Add boiling water gradually & mix.

Bake in greased 9x13 pan at 350 degrees for 30-35 min.

"Go To Church" Chicken......

1 can cream of mushroom soup
1 can cream of celery soup
2 small cans milk
1 package onion soup mix
1 Box Uncle Ben's Wild Rice mix
6 chicken breasts -- up to 8

Blend first five ingredients together and spread over bottom of greased casserole.

Lay chicken breasts on top of rice.

Cover and bake at 350'f degrees for 1&1/2 hours.

Uncover to brown before serving.

Think my temp thingy is outta wack again this morning, by about 4 degrees!....lol
 
Hydro went out Friday night around 9:30-10:00 and apparently did NOT come back on until about 10:30 Saturday morning!
 
Not nice to hafta wash with cold water...at 4:00 a.m.!!!!!!
 
Anyway...muddled through & went to work....in spite of the draw-backs...lol
 
Got Mrs. "Tight-wads" furniture all painted up & got paid....still had 2 hours to spare before I could get in to clean the place booked for the afternoon,.... so drove up the same street I was on to another clients  to see IF they might have any work to keep me occupied for a couple of hours & they did!
 
I cleaned the Cabanna....then motored on to the "p.m."-place, cleaned it and was home by 6:30!
 
I replied to 1-e-mail......then shut this thing down, made supper, called security to tell them the "yard/property" lights were not working, watch television for about 45 minutes.... then went to bed!
 
Here I sit this morning and wouldn't you know it?......there is again today.........
 
NO HOT WATER!
 
Guess when I made my "yard-light-report"....no one did anything about it!
 
What are you doing today?
 
I would of really liked to of driven to Campbellford to visit my parents graves....but work is booked..(& in this racket, ya have to go when they want you OR they hire Molly Maid OR Suzy Homemaker!)....maybe I will get there next weekend......not booked for next Sunday.
 
Have 2 places today...first one is a 4-floor townhouse....and second is a "all on one floor" condo!
First one..she will be golfing....second one will be in the country at their "Summer place"!
 
All in all.....a VERY pleasant day for me!..lol

7 Layer Pea Salad.......
Make this the night before using it.

3 cups shredded lettuce
1/2 cup red onion, chopped finely
1 cup celery, chopped
1 (10 ounce) box frozen peas DO NOT DEFROST
1 cup Miracle Whip or enough to cover to of salad
2 hard boil eggs
1 cup sharp cheddar cheese
1/2 cup  bacon bites
1 to 2 tablespoon sugar, optional, I don't use it

In a large bowl put the shredded lettuce, red onion, celery and frozen
peas. In a medium bowl mix Miracle Whip and sugar, if using. Put on top
of salad. Then add the eggs, sharp cheddar cheese, and bacon
bites.

DOROTHY'S FUDGE PUDDLES.......
1/2 c. butter
1/2 c. sugar
1/2 c. creamy peanut butter
1 egg
1/2 c. packed brown sugar
1/2 tsp. vanilla
1-1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt

FUDGE FILLING:
6-oz milk chocolate chips
1 tsp. vanilla
6-oz semisweet chocolate chips
chopped nuts, optional
1 can Eagle Brand milk

In mixing bowl, cream butter, peanut butter and sugars; add egg and
vanilla.

Add dry ingredients to the creamed mixture.

Chill one hour.
Shape in 48 1" balls.

Place in miniature muffin tins.

Bake 325º
about 14-16 minutes.

(My oven bakes them in less time, so watch closely.)

Immediately they are removed from oven make a well in center of each
cookie by pressing a melon b.a.l.l.e.r in it.

Cool five minutes and
remove from pans.

Make filling by melting chocolate chips in microwave
for two minutes.

Stir in milk and vanilla.

Carefully spoon the filling into each well.

Top with nuts if desired.

Rhubarb Cake.......
4 cups rhubarb cut up
1 cup sugar
1 pkg red Jell-O, dry (small)
1 box white cake mix (dry)
1 cup water
1/3 cup melted butter

Starting with rhubarb, layer one at a time in a 9 x 13 pan.

Serve with cream or ice cream.

Bake 1 hour at 350º.

This is so good and so quick and simple, no mixing bowl needed.

Baltimore Peach Cake.......
1 package. active dry yeast
1/4 cup warm water
1/4 cup butter or margarine
1 teaspoon salt
1 tablespoon sugar
1 cup scalded milk, cooled to lukewarm
1 egg slightly beaten
4 - 5 cups flour
softened butter

Topping
4 or 5 ripe peaches
1/2 to 1 cup sugar
1 tablespoon cinnamon
powdered sugar

Glaze
1/3 cup apricot jam
1 tablespoon hot water

Soften yeast in warm water.

Put 1/4 cup butter, salt, and sugar in large
bowl.

Add lukewarm milk and stir until sugar is dissolved.

Stir in yeast
mixture and beaten egg.

Gradually stir in flour until stiff
dough is formed.

Grease top of dough and cover bowl.

Let rise in warm
place until doubled in bulk.

About 30-60 minutes.

Punch down dough and knead on lightly floured board until smooth and
elastic.

Divide in half and roll each half into a rectangle the size of
a cookie sheet.

Transfer 1 piece of dough to sheet and spread with
softened butter.

Put sliced peaches on top of dough and press each slice
into dough.

Sprinkle with cinnamon and sugar.

Cover with other piece of
dough.

Let rise until double in bulk, about 20-40 minutes.

Bake at 375° for
30-35 minutes or until done.

Sprinkle with powdered sugar or make a
glaze of apricot jam and hot water and spread on cake.

Bran Muffins (Microwave)....
4 eggs
5 teaspoons soda
1 quart buttermilk
2 teaspoons salt
5 cups flour
1 cup oil
3 cups sugar
1 (15 oz.) box raisin bran

In large bowl, beat eggs and blend with buttermilk.

Add flour, sugar,
soda and salt.

Mix in oil and bran flakes.

Allow batter to set for 24
hours.

Keep covered in refrigerator up to 6 weeks.

Spoon out muffins as
needed.

Cook in cupcake or custard cups, filling half full of batter.

If
custard cups are used, place cups in a circle on a large plate.

Because
batter is cold, timings are slightly longer than usual.

To make 2 muffins: Cook on Medium for 2 to 2-1/2 min.
To make 4 muffins: Cook on Medium for 2-1/2 to 3-1/2 min.
To make 6 muffins: Cook on Medium for 3-1/2 to 4-1/2 min.

Remove muffins from utensil immediately after baking to cool. Makes 6 to 8 dozen muffins.

Haystack Candy.......
l lb white chocolate or almond bark
1 pkg (12 ozs) of peanut butter chips
1 can (12 ozs) of roasted peanuts unsalted
2 cans of potato sticks ( 3 cups)

Combine white chocolate and peanut butter chips.

Microwave until the
chocolate and peanut butter chips melt.

Stir in peanuts and potatoe
sticks.

Drop by teaspoonfuls on wax paper on a cookie sheet.

Place in
refrigerator to set, approximately 20 minutes.

Store in covered
container.

Makes about 4 dozen

7 Up Salad.........
8 oz. Cream Cheese, softened
1 Small Can, Crushed pineapple, save juice
1 Cup Water (use saved pineapple juice to make 1 cup)
1 tsp. Sugar
1 tsp. Vanilla
1/2 Cup Pecans, chopped
1 reg. Box Lemon or Lime Jello
10 oz 7 Up (soft drink �?remember: this is an old recipe, drinks now
bottled in 12 oz, you must measure!)
Green food coloring

Add enough water to pineapple juice to make 1 cup of liquid.

Boil.

Add Jello & stir to dissolve.

Add cream cheese and blend well.

Add crushed
pineapple, nuts, sugar, and vanilla.

Mix well.

Add 7 Up.

Add food color
to make light green.

Chill until set.

I have also made this using Mandarin Oranges (instead of the pineapple)
and Orange Jello (instead of the lemon or lime) and yellow food
coloring.

Jiffy Orange Nut Bread w/ Glaze.......
6 tbl. butter
1 ½ c. boiling water
1 c. orange juice
6 tbl. orange zest
3 c. sugar
6 tsp. vanilla
3 eggs, slightly beaten
6 c. flour
3 tsp. baking powder
3 tsp. baking soda
1-1/2 tsp. salt
1-1/2 c. nuts

Melt the butter in the boiling water.

Blend in orange juice, orange
rind, sugar, vanilla and eggs.

Stir in flour, baking powder, baking
soda, salt and nuts.

Stir until all flour is dampened.

Pour into greased
pans that have been sprayed with Pam.

Bake @ 350º 1 hour or until
done.

This recipe makes 3
large loaves or 9 small ones.

Use 1 lb. nuts and 5 or 6 oranges.

Glaze for Bread
2 c. powdered sugar
4 tbl. orange juice

Blend thoroughly and drizzle over warm bread.

so this is yer good morning....
BTW....I won't be posting for a few days..... I need time to clean out the membership in some of MY groups and catch up on a few other things too!
(I sit here for hours every day & in the end it is about 6 of us that "do the work"!)
I have had it with the heat and the crap & a 4th. morning in 7 days of no hot water to wash my face with at 4:00 a.m.!

Hello to Everyone!

I am still alive......altho I am quite battered and bruised,(as is dh too)!

We have had a hell of a month!!!!!!!

$2,300 laid out for 2 moving companies,(included $100 for pizza's & refreshments x's 2), numerous items broken & many other momentoes(sp)....STOLEN!

I have had & NOT had internet service...(when I had it,...I had no time, when I didn't have it.....I had TIME!!!!)

We are moved....and are still living outta boxes.....have no idea where anything is......did (diligently),...mark ALL boxes as to floor and room they were to go to.......(even marked the rooms).....BUT the movers were iliterets(sp)....I guess.....!

Anyway....it will get sorted...just not as rapidly as we had hoped.

Needed 2 movers...first ones soaked us $1000 and left 3 rooms of furniture.....(after emptying 2 lockers)....tossed stuff, broke lotsa things....(cash paid,... no insurance!(StOOOOOOOOOOOOPID me)....then stole items out of dresser drawers.....(how can I prove that???????)

Second mover......(I have used before).....cost $1100 & got it all moved BUT took 12 hours to do so and dh was helping them and as he turned to exit the truck...he tripped over the end of the ramp and fell 5-6 feet to the pavement..hurting his  arm, shoulder and left hand,(he IS left-handed!)

When those movers left here that night.....we both sat & cried,.....questioning IF we had made the right decision?

Last Sunday....I was walking out to the car, (had to go to Rona to order a shed for the yard)......& I "fell OFF the sidewalk"! It was a "drop of maximum 1 inch!"....BUT I guess the different texture under my foot........, felt different and down I went......braced myself with my left hand...drove the lower fore-arm part "back into my elbow"....and in turn shoved the upper arm part back into the shoulder, sorta pushing it outta place!!!!!

We have worked EVERY day......in pain.....I am so black & blue, my clients look at dh and & as IF we are holding fighting, wrestling matches with each other!!!!!

Anyway......I am here......NOT saying I will be in EVERY day,(still have so much to get sorted.....I cannot fathom we had this all in a 2 bedroom apartment!)

Next move, (God willing).....I am buying a huge box of MATCHES!

NOT taking a thing........BURNING it ALL!

I have missed everyone soooooo much!

I want to hug each & everyone of you!

Guess "All would be right with the World" IF I added a recipe?

Hope the Canadians that are celebrating  our "Canuck Thanksgiving" have a good feast......and don't eat too much!

Mashed Squash
Metric Ingredient Imperial
1 medium acorn squash, halved & seeded 1
15 ml maple syrup 1 tbsp
2 ml pumpkin spice 1/2 tsp
15 ml butter 1 tbsp
- salt & pepper to taste -

Place squash halves, cut sides down, on baking sheet.

Bake in preheated 400 F (200 C) oven for 30 minutes or until tender.

Scoop squash pulp into mixing bowl.

Beat with electric mixer until almost smooth.

Stir in syrup, spice and butter.

Season to taste with salt and pepper.

Serves 4

Asparagus with Creamy Mustard Sauce
Metric Ingredient Imperial
125 ml yogurt 1/2 cup
30 ml mayonnaise 2 tbsp
15 ml dijon mustard 1 tbsp
10 ml lemon juice 2 tsp
2 ml salt 1/2 tsp
750 g asparagus spears, trimmed 1 1/2 lb
- pepper to taste -
In a small bowl; whisk yogurt, mayonnaise, mustard, lemon juice and salt.

Cook asparagus until tender crisp.

Drain well.

Serve with sauce drizzled on top.

Serves 6

Mashed Potatoes and Cauliflower
Metric Ingredient Imperial
1.2 L cauliflower, cut into small pieces 4 1/2 cup
625 ml potatoes, peeled & cut into small pieces 2 1/2 cup
75 ml sour cream 1/3 cup
15 ml chives 1 tbsp
- salt & pepper to taste -

In a large saucepan; add cauliflower and potatoes.

Cover with water and bring to boil.

Reduce heat and simmer for 10 to 12 minutes or until vegetables are tender.

Drain.

Add sour cream, chives, salt and pepper.

Using potato masher; mash until blended.

Serves 6

THANKSGIVING APPLE POUND CAKE......   

2 c. sugar
1 1/2 c. oil
3 eggs
3 c. plain flour
1 tsp. salt
1 tsp. soda
1 tsp. vanilla
1 c. raisins
1 c. chopped pecans
1 c. flaked coconut
3 c. diced apples

Mix together sugar, oil and eggs.

Then add dry ingredients.

Add vanilla, raisins, nuts, coconut and apples.

Pour into tube pan or bundt pan.

Bake 1 & 1/2 hours on 325 degrees.

ICING:
 
1 c. milk
1 stick margarine
1 c. brown sugar

Put in saucepan and bring to a boil.

Boil for 1 minute.

Pour over hot cake.

THANKSGIVING PUMPKIN CAKE....

1 (16 oz.) can pumpkin 
3 eggs
3/4 c. vegetable oil
1/2 c. water
2 3/4 c. flour
2 1/4 c. sugar
1 1/2 tsp. baking soda
1 1/4 tsp. salt
3/4 tsp. nutmeg
1/2 tsp. cloves
1 1/2 tsp. cinnamon
1/2 c. chopped nuts
1 c. raisins (optional)

Beat together eggs, pumpkin, vegetable oil and water.

Add dry ingredients.

Mix well.

Stir in chopped nuts.

Bake in greased and floured tube pan for 1 hour or until done at 350 degrees.

Microwave Mashed Sweet Potatoes
1 (24 oz.) can sweet potatoes, drained
2 tablespoons honey
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup chunky applesauce

In a large glass bowl, mash the sweet potatoes.
Stir in the honey,
cinnamon and nutmeg.
Add applesauce, stirring well.
Cover the bowl, then
microwave on high for 3 to 5 minutes, or until hot, stirring midway
through.
If you would rather use fresh sweet potatoes, you could bake

This is what the temp is alleged to be......feels warmer to me!

I am home today....have $1000.00 worth of shed material to put together!
It IS laying in the back yard....dh is dumb & I am dumber about the whole issue!......
We will either succeed and at the end of the day have a 10x7 shed standing out there OR I will have broken ground and buried the sob under one of the 20 patio slabs that are to act as the "foundation" for this structure!.........
I did 4 loads of laundry last night after supper and it is hung out,(did that last night too) on "my new whirley-gig" clothes line I installed in the backyard, right after we moved here. ........
I AM ready to tackle the shed!!!!!!!!!!..........
Meat is marinating for supper... .left-over 'taters will be fried to go with.....and guess I'll boil some baby carrots to finish filling the plate! Lemon cake with vanilla icing for 'zert!

Graveyard Peanut Butter Pie

Dig into this pie and you might feel as though a spell has been cast upon you because you can't resist going back for seconds!

Makes one pie .

4 oz. cream cheese, softened at room temp.
1/2 of a small jar of peanut butter (does not have to be exact amt. I just "eyeballed" it)
1/2 C. powdered sugar
1/4 C. milk
8 oz. Cool Whip, thawed
1 Oreo piecrust or homemade chocolate wafer cookie pie crust
Chocolate wafer cookie crumbs
Tombstone shaped cookies
White chocolate candy melts or almond bark
Black paste food coloring
1 can vanilla frosting
plastic spiders, gummi worms...etc

To make pie:
In a large bowl, cream together cream cheese, peanut butter, powdered sugar and milk. 
Fold in 6 oz. Cool Whip.
Stir until all ingredients are completely mixed together.
Pour mix into the piecrust.
Reserve leftover Cool Whip for decorating the top of the pie.

Sprinkle the chocolate cookie crumbs all over the top of the pie.
Stick pie in freezer until you have finished making the tombstone toppers.

To make tombstones:
Melt white chocolate in microwave. If the tombstone-shaped cookies are sandwich cookies, separate and remove filling.
Dip each cookie into chocolate and lay on waxed paper to dry.
You can stick the cookies into the freezer for quicker drying.
You will need 1 cookie for each slice of pie.

Use the black food coloring to tint 1/4 C. of vanilla frosting.
Add frosting to a plastic baggie, snip off the tip of one end of the baggie and use to write silly phrases or names* on the tombstones.
Dry completely.

Remove pie from freezer.
Score the top of the pie into eight slices.
Stick one tombstone cookie down into each slice of pie.

At this point, the pie can be stored in the freezer until you are ready to serve it.
Remove it and allow to partially thaw for 10-15 minutes before serving.
Decorate around each tombstone with the leftover
Cool Whip and spiders & gummi worms.

Freeze leftovers.
