Herbed Chicken En Casserole Herbed Chicken En Casserole Ingredients 3 chicken breast, split Salt and pepper to taste 1/4 c butter 1 can of cream of chicken soup 3/4 sherry 1 5 oz can water chestnuts 1 3oz cn broiled sliced mushrooms , drained 2 tbsp, chopped green peppers 1/4 tsp crushed thyme Procedure Season the chicken with salt and pepper and brown in butter in a skillet over low heat. Arrange chicken, skin side up in11 1/2 x 7 1/2 x1 1/2 inch baking dish. Add the soup to the drippings in the skillet and add sherry slowly , stirring until smooth. Drain and slice the water chestnuts and add over soup mixture, Add remaining ingredients and heat to boiling point. Pour over chicken and cover with foil. Bake at 350 degrees for 25 minutes. Uncover and bake for 25- 35 minutes longer or until chicken is tender. Serving Information - Serves: 6
