Pierogi Casserole
1 lb. lasagna noodles, cooked
3/4-1 lb. cheddar cheese, grated
1 1/2 sticks butter or margarine
2 medium onions, chopped
10-12 potatoes, cooked
Salt and pepper to taste
Cook noodles according to package directions. Cook and drain potatoes.
Mash potatoes and add 1/2 lb. grated cheese, beat well. Sauté onion in
butter until soft. Add 1/2 of the onion to potatoes. Season with salt
and pepper. Butter a 9 x 13-inch pan. Place a layer of noodles, then a
layer of potatoes. Repeat, ending with noodles. Pour remaining butter
and onion and cheese over all. Bake at 350° for 20-25 minutes. Let
stand 10 minutes before serving.
