Italian Crockpot Meatloaf 2 lbs. ground beef 1/2 cup oatmeal 1 small can tomato paste 1 small chopped onion 1/2 cup chopped bell pepper 1 small chopped zuchinni 1/2 cup frozen veggie medley (corn, carrots peas) 1 tsp. garlic powder 1 tsp. oregano salt and pepper to taste Add ground beef, garlie, oregano, salt and pepper and mix well. Add oatmeal and tomato paste and mix well. Add all the veggies and mix well again. Pour mixture into crock pot and shape into a large pattie. Cover and cook on low or 8 hours (or on high for 4 hours).
