Yield: 8 dozen.
9 ea egg yolks
3 tb sugar
3 tb sour cream
1 tb rum
1 ts vanilla
3 c flour sifted
1/2 ts baking powder
1/2 ts salt
oil for deep frying
confectioners sugar
Beat egg yolks with sugar until well combined.
Add sour cream, rum & vanilla then mix until smooth.
Sift flour, baking powder & salt.
Add to egg yolk mixture, a little at a time.
On a heavily floured surface knead dough vigorously, punching &
squeezing as much flour into it as it will take until dough is no
longer sticky.
Separate dough into several portions then roll very thin.
Turn dough & loosen often when rolling.
Dough should look like parchment paper that you can see through.
Cut dough into strips approx. 1 1/2" wide, 4" long.
Make slit closer to one end then bring longer end through slit.
Heat oil to 375 deg-F then fry quickly until golden not brown.
Turn only once.
Drain on paper towels.
Dust with confectioner's sugar.
