Sunshine Salad 1 small pkg lemon, lime, or orange jello (can be made with sugar free gelatin) 1 cup boiling water 1/2 cup ice water 9 ounce can crushed pineapple pinch of salt 2 medium sized carrots, grated Put jello into a small mixing bowl, add boiling water and stir jntil gelatin is thoroughly dissolved. Then stir in the ice water, drained pineapple, and salt. Chill in refigerator and when gelatin starts to thicken add the grated carrots. Pour into an 8" square pan and chill until firm.
