Raspberry Cookies
1-1/2 sticks butter or margarine, softened
3/4 cup sugar, divided
2 eggs, separated
2-1/2 cups sifted flour
1 cup raspberry jam
1/2 cup flaked coconut
1 cup chopped walnuts
For pastry, mix butter,
1/4 cup sugar, 2 egg yolks, flour and pat into 13x9 pan and bake at 350 for 15 minutes or until golden brown.
Beat egg whites and the rest of the sugar.
Leave until pastry is done.
Pour raspberry jam over crust, sprinkle coconut over top.
Then pour meringue and walnuts over top.
Bake for 25 minutes.
Let cool completely before cutting into squares.
