Cinnamon-Oatmeal Muffins
1-1/2 cups flour
1 Tbs. baking powder
1/4 tsp. salt
3/4 cup quick-cooking oats
2/3 cup brown sugar
3/4 tsp. ground cinnamon
3/4 cup skim milk
1/3 cup unsweetened applesauce
1-1/2 tsp. vegetable oil
3 egg whites
Heat oven to 400. Combine flour, baking powder, salt, oats, brown sugar, and cinnamon in a medium bowl; make a well in center of mixture.
Combine milk, applesauce, oil and egg whites; pour in well
in center of dry ingredients, stirring until just moistened.
Coat 12 muffin cups with nonstick cooking spray; fill each 3/4 full with batter.
Bake 18-20 minutes or until golden. Remove from pan
immediately; cool on racks. Makes 12 muffins
