Poultry, One-Pot Chicken w/Noodles


 
  • 2 cups cooked chicken, diced 
  • 6 cups chicken broth 
  • 1 pound egg noodles, uncooked
  • 1/2 green bell pepper, chopped 
  • 1/2 red bell pepper, chopped 
  • 1 medium onion, cut into rings 
  • 1 (4-ounce) can sliced mushrooms, or 8 ounces fresh mushrooms 
  • Salt and pepper to taste    
  1. Place chicken in a large pot with broth. Add peppers and onions; simmer 10 minutes.
  2. Add noodles to broth and cook according to package directions.
  3. Add mushrooms 5 minutes before noodles are done. Season with salt and pepper to taste. Serve hot.
