Pumpkin Bread Pudding
 
  • 3 cups heavy cream
  • 2 1/4 cups canned solid pumpkin
  • 1 1/2 cups whole milk
  • 1 1/2 cups sugar
  • 6 large eggs, plus 3 egg yolks
  • 3/4 t. salt
  • 1 1/2 t. ground cinnamon
  • 3/4 t. ground ginger
  • 3/8 t. ground allspice
  • pinch of ground cloves
  • 15 cups cubed (1") day-old baguette or crusty bread
  • 9 oz. melted butter

Heat oven to 350 degrees. Next, whisk together the cream, pumpkin, milk, sugar, eggs, yolks and spices in a bowl.

Toss bread cubes with butter in another bowl, then add pumpkin mixture and toss to coat. Transfer to an ungreased 9 by 9 inch baking dish and bake until custard is set, 25-30 minutes.

Tarna, pudding looks delicious - and low calorie too!  Will whip up for son who loves all things pumpkin.  As a baby he would eat only the orange vegetables, squash, carrots, sweet potato.  
 
Below is picture of Cranberry Pumpkin Upside Down Cake.
 
I've baked this cake twice, got it from Sunset Magazine.  It is a really pretty, holiday-ish looking cake - berries look like jewels.  Made a couple of adjustments - baked in a 10 inch heavy skillet not the 9" square pan called for.  I think it's prettier somehow without angles.  Also, in second try I added dried orange cranberries. I would recommend sweetened whipped cream to top, as cranberries are tart.  Next time, I may marinate them in Gran Marnier and see what happens.
 
 
 
Preheat oven to 350.  Toast 2/3 c. coarsely chopped walnuts for 10 minutes or so.  Prepare pan or skillet - butter bottom and sides, line bottom with parchment paper. 
 
1/4 c. butter plus more for pan.
1/2 c. firmly packed light brown sugar. (I always wonder if it's packed firmly enough...) :-)
1 Tbsp light or dark rum
1 1/3 c. fresh cranberries

2 large eggs
1 c. granulated sugar
1 c. canned pumpkin
1/3 c. canola or other veg oil
1 1/2 c. all-purpose flour
1 1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt.
 
First, prepare topping. Melt butter in saucepan, stir in brown sugar until blended, add rum.  Pour into buttered, lined pan and spread.  Toss Walnuts and Cranberries so they're blended, then spread evenly over brown sugar mixture. 
 
Make cake batter.  Measure dry ingredients and mix, set aside. Beat eggs, granulated sugar, pumpkin and oil with mixer in large bowl until smooth.  Stir flour mixture into pumpkin mixture.  Spread batter evenly over cranberries and walnuts. (I use great big spoon to place dollops of batter all over pan - makes it easier to spread without disturbing your artfully arranged cranberries, as batter is thick)
 
Bake 35 to 45 min until skewer inserted in center comes out clean.  Cool for at least 10 minutes in pan.  Run thin-bladed butter knife around sides, and invert cake onto serving dish.  (Another good reason for round baking pan).  Remove pan, then parchment paper.  Serve slightly warm or cool with whipped cream.

You're welcome Tarna.  Hard to believe TG is almost here, huh?  What I liked about the cake was its festive appearance.  Let me know how it turns out if you make it.  I also made the other day a caramel-apple upside down cake (into upside down cake kick it seems).  I give most of these away to kids, friends or neighbors to avoid temptation - love to bake.

I may have to make it after Thanksgiving. I found out that my grandmother is responsible for the pies & cakes this year. I'm still making the pumpking bread pudding though !
 
Let me know how it turns out when you make it for your son. The recipe is from a local restaurant in town.

I will Tarna - making it for TG, and a Pecan pie.  What will your grandmother make? 
 
Just had dinner pow wow with brother - we'll all eat at his place.  He'll do turkey. taters and relishes, I will do the rest.  My daughter, who is vegetarian usually roasts a variety of root vegetables with olive oil and rosemary. Do you prepare a special dish?  Can't believe (and I say this every year) it got here so fast...

I'm not sure what kind of pies my grandmother and her sister are going to make. I need to call and find out and make sure that one of them is a pecan pie.

Hey Tarna - hope you had a lovely TG day.  I'm still full and suffering post thanksgiving remorse, vowing to exist on spartan regimen til Christmas (ha!) - I halved pudding recipe, as I also made pecan pies -  it was huge hit!  I'm thinking of adding a caramel syrup, as is done with flan next time. 
 
Heard from MarkUK - his initial take is that if it's even doable, it's quite complicated - I had thought to do it myself if he could give me instructions, but it may be we'll just have to scroll through pages.  Alternatively, I could do a quick category inventory (desserts, main dishes, drinks, appetizers) and post a table of contents thread to be bumped from time to time.

umm... I think caramel syrup would make a great addiction. I had a great Thanksgiving.... sounds like you did as well. My grandmother made pecan pie and it was so delicious. Both the pie and the pudding were hits and I'm still recovering, even though I took several walks afterwards.
