Ingredients
2 cups Diced Cabbage 1/2 cup Diced Onion 1/2 cup Diced Carrot 1/2 cup Diced Celery 1/2 cup Diced & Peeled potato 1 cup canned diced tomato (i put the entire can in - 14 oz) 5 cups vegetable broth 1/2 cup Diced Zucchini 1 15oz can red kidney beach 1/4 C elbow macaroni fresh oregano
Procedure
In a large pot, combine the first 7 ingredients... Bring to just about boiling, (reduce heat to simmer - cover to maintain simmer) Cook about 15 minutes Add remaining ingredients except Oregano Cover and cook until veggies tender and pasta is cooked al dente (approx 15 mins) Add oregano to garnish - small amount
