I hate meringue, but I LOVE these. They seem like a lot of work, but they're worth it. Makes about 50, with VERY LITTLE FAT, so you can eat them all. For breakfast (see below)
 
2 egg whites (room temp.)
1/2 tsp cream of tartar
3/4 C sugar
pinch (whatever that is) of salt
3 drops GREEN food coloring
1 (6 oz) semi-sweet MINT flavored chocolate chips OR mint chips OR chocolate chips (if you use plain chocolate chips, put 3/4 tsp peppermint extract in the batter)
 
Pre-heat oven to 375 degrees
 
In a medium bowl, beat egg whites & cream of tartar while gradually adding sugar, salt, coloring and mint extract (if applicable)
 
Beat (this is the part I hate, get your kids to help) about TEN (10) MINUTES until stiff peaks are formed, stir in chips
 
Drop by teaspoonfuls on to UNGREASED cookie sheets
 
(This is the cool part) Turn the oven OFF and place cookies in the oven OVERNIGHT. Go to bed. In the morning, you will wake up to COOKIES!
