I already know... how boring is macaroni and cheese? But this recipe is actually really good. I made it for a Christmas party this year and there were no leftovers, which surprised me because there was plenty of competition.
2 cups uncooked macaroni
2 eggs, beaten
2 cups evaporated milk
1/2 cup butter, melted, (divided use)
1/2 teaspoon cayenne pepper (I used a little more)
1 teaspoon salt
2 1/2 cups sharp cheddar cheese, shredded (I used about 3 and 1/2 cups, plus about a quarter of a small stick of Velveeta, and it wasn't cheese overload)
1 cup breadcrumbs
1 teaspoon paprika
1/4 cup parmesan cheese (I used the Kraft product, not real grated parmesan)
Cook the macaroni, drain it, and rinse with cold water.
Put half the macaroni in a LARGE baking pan (glass, foil, stainless steel or aluminum).
Cover with half of the cheddar cheese. (I added some chunks of Velveeta, and liked the results, but it probably isn't necessary.)
Spread the remaining macaroni over top.
Sprinkle remaining cheddar cheese (and Velveeta, if you're using it) over the macaroni,
Beat the eggs with the milk, 1/4 cup melted butter, cayenne pepper, and salt.
Pour the milk mixture over the macaroni and cheese.
Mix the breadcrumbs with the paprika, remaining 1/4 cup butter, and parmesan cheese.
Sprinkle the breadcrumb mixture over the macaroni.
Bake at 350 degrees 40 to 45 minutes.
